2 cups sugar
3 eggs
1 cup vegetable oil
2 teaspoons vanilla extract

CREAM CHEESE FROSTING: Whip cream cheese, butter and vanilla with an electric mixer until fluffy (about 2 minutes). Beat in powdered sugar (add more if necessary to reach desired consistency - if your kitchen's hot, you might need more because the butter will be softer). Makes enough to top one 13x9" cake - double recipe if using on a layered cake.

Tips:

  • Use the freshest ingredients possible, especially the cream cheese and butter. This will ensure that your cake has the best flavor and texture.
  • Make sure the cream cheese and butter are at room temperature before you start baking. This will help them to cream together smoothly and create a light and fluffy batter.
  • Don't overmix the batter. Overmixing can make the cake tough and dense. Mix just until the ingredients are combined.
  • Bake the cake in a preheated oven. This will help to ensure that the cake bakes evenly.
  • Let the cake cool completely before frosting it. This will help to prevent the frosting from melting.
  • If you don't have time to make the cream cheese frosting, you can use a store-bought frosting instead.
