ALMOND SHRIMP WITH AMARETTO BUTTER

Almond Shrimp with Amaretto Butter image

A fabulous, romantic dish for two - and it's quick and easy! I adapted the recipe from a Junior League of Lafayette, LA recipe; they say that it is the creation of Sous Chef Bryan Richard of Chez Marcelle. The original recipe calls for an entire stick of butter, but I think you'll agree that 3 tbsp. is plenty. If you like Amaretto, you'll love this! It can be served with angel hair pasta, but I like to eat it without so as not to interfere with the delicious flavors.

CHEF LIN'S COCONUT SHRIMP

Chef Lin's Coconut Shrimp image

This is a wonderful sweet and creamy shrimp dish. It makes a great appetizer for a seafood dinner of steamed crab legs and lobster. I (Bird) created this recipe (that I was Inspired by) from a buffet item at Chef Lin's Chinese Buffet in Chattanooga, TN. At Chef Lin's I would grab this up by the bowlful. :)

Tips:

  • Use fresh prawns: Fresh prawns have a sweeter flavor and better texture than frozen prawns.
  • Devein the prawns: Deveining the prawns removes the digestive tract, which can be gritty and unpleasant to eat.
  • Marinate the prawns: Marinating the prawns in a mixture of Amaretto, olive oil, garlic, and herbs adds flavor and helps to keep them moist during cooking.
  • Cook the prawns over high heat: Cooking the prawns over high heat helps to sear them and lock in their flavor.
  • Do not overcook the prawns: Overcooked prawns become tough and rubbery. Cook them for just a few minutes, until they are pink and opaque.
  • Serve the prawns immediately: Prawns are best served immediately after cooking, while they are still hot and juicy.

Conclusion:

Prawns Amaretto is a quick and easy dish that is perfect for a weeknight dinner or a special occasion. The Amaretto adds a sweet and nutty flavor to the prawns, and the garlic and herbs add a savory depth of flavor. This dish is sure to please everyone at your table.
