I found this recipe on the back of a can of sweet potatoes. Everyone seemed to really like them... even those who don't usually like Yams.

1 (29 ounce) can cut sweet potatoes in light syrup, drained
1/3 cup chopped pecans
1/3 cup coconut
1/3 cup firmly packed brown sugar
3 tablespoons flour
3 tablespoons margarine or 3 tablespoons butter, melted

Steps:

  • Heat oven to 350 degrees.
  • Place drained yams in an ungreased 1/2 quart casserole or baking dish.
  • In a small bowl, combine remaining ingredients; blend well. Sprinkle over yams.
  • Bake at 350 for 35 to 40 minutes or until bubbly.

two cans (2 lbs, 8 oz. each) yams, drained, or 4 pounds cooked, peeled and sliced fresh yams or sweet potatoes
2/3 cup orange juice
1 tbsp. grated orange rind
5 tbsp. brandy
2 t. salt
freshly ground pepper to taste
1 t. ground ginger
4 tbsp. butter or margarine, melted (1/2 stick)
1/3 cup light or golden brown sugar, packed
3 egg yolks
PRALINE TOPPING:
2/3 cup light or golden brown sugar, packed
1/4 lb. (1 stick) butter or margarine, melted
1 cup chopped pecans, about 4 oz
1 t. ground cinnamon

Steps:

  • 1. In mixing bowl, with mixer, beat yams or sweet potatoes until smooth. Mix in remaining yam casserole ingredients, beating until mixture is light and fluffy. Butter a 12 inch porcelain quiche dish or a shallow 2 quart casserole (7 x 11 inches). Pour in yam mixture, smoothing top evenly. Make praline topping by mixing all ingredients together in small bowl. Spread evenly over yams. May be refrigerated covered overnight at this point. Bake at 350 for 45 to 50 minutes or until golden brown and bubbly. Remove from oven and let stand 10 minutes before serving. 3 Tbsp all purpose flour

  • 1. Place drained yams in an ungreased 1 1/2" quart baking dish. In a small bowl combine remaining ingredients; blend well. Sprinkle this over the yams.
  • 2. Bake @ 350* for 35-40 minutes, or until casserole bubbles.

Tips:

  • Choose firm and evenly shaped yams. Avoid any with blemishes or soft spots.
  • To easily remove the skin of the yams, score them with a sharp knife and then boil them for a few minutes. Once they are cool enough to handle, the skin will slip right off.
  • To make the praline sauce, use light brown sugar for a classic flavor. If you want a richer flavor, use dark brown sugar.
  • To prevent the praline sauce from burning, cook it over medium heat and stir it constantly.
  • If you don't have a ricer, you can mash the yams with a potato masher or fork.
  • For a smoother praline sauce, strain it through a fine-mesh sieve before serving.
