PRALINE SWEET POTATOES
Came across this when I was cooking at a restaurant. The delivery truck accidentally sent us pre-mashed sweet potatoes in vacuum bags. Not wanting to take them back, he told us to keep them. We didn't have sweet potatoes on the menu, but I could make whatever I wanted, so I looked in my recipe books & came up with this. It was a...

Steps:
- 1. Place potatoes in mixer bowl. Turn to low and mix about 30 seconds. Add milk, sugar, eggs,2 tablespoons butter, nutmeg, and cinnamon. Turn to high and beat about 1 minute. Fill small rameikins that have been sprayed with cooking spray about 3/4 full.
- 2. Bake at 400°F for 20 minutes, or until set. It will puff up & start to brown & feel firm to touch.
- 3. Mix all topping ingredients by hand. Spread on hot puff. May make extra & put on if wanted. I always did. Bake 10 minutes longer. Serve warm.
- 4. Cooking time above under prep time does not include the time it took to cook the sweet potatoes to start out with. That will vary on how you do it. I would bake them in a 400° oven until soft for maximum flavor.
Tips:
- Choose the right sweet potatoes: Look for firm, unblemished sweet potatoes that are about the same size so they cook evenly.
- Prick the sweet potatoes: This helps the steam escape and prevents the potatoes from bursting.
- Cook the sweet potatoes until they are tender: You can check this by inserting a fork or knife into the center of the potato. If it goes in easily, the potato is done.
- Make the praline sauce while the sweet potatoes are cooking: This will save you time and ensure that the sauce is hot and ready to serve when the potatoes are done.
- Use a heavy-bottomed saucepan to make the praline sauce: This will help prevent the sauce from burning.
- Stir the praline sauce constantly: This will help prevent the sugar from crystallizing.
- Serve the sweet potatoes immediately: The praline sauce will harden as it cools, so it's best to enjoy the potatoes while they're still warm.
Conclusion:
Praline sweet potatoes are a delicious and easy-to-make side dish that is perfect for any occasion. The combination of sweet potatoes and praline sauce is irresistible, and the potatoes can be cooked in a variety of ways to suit your taste. Whether you bake them, roast them, or fry them, praline sweet potatoes are sure to be a hit with your family and friends.
