3 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons ground allspice
1 teaspoon salt
1 ½ cups vegetable oil
2 cups white sugar
4 eggs
3 cups apples - peeled, cored and shredded
1 cup chopped pecans
1 cup raisins
½ cup white sugar
½ cup light brown sugar
½ cup half-and-half cream
¼ teaspoon salt
½ cup butter, softened
1 cup chopped pecans
¼ teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 10-inch Bundt pan. In a bowl, whisk together the flour, baking soda, allspice, and 1 teaspoon of salt.
  • In a large bowl, mix the vegetable oil, 2 cups of sugar, eggs, apples, 1 cup of pecans, and raisins. Mix the flour mixture into the wet ingredients, and pour the batter into the prepared Bundt pan.
  • Bake in the preheated oven until a toothpick inserted into the center of the cake comes out with moist crumbs, about 70 minutes. Let the cake cool in the pan for about 10 minutes, then turn out onto a rack to finish cooling.
  • For glaze, mix 1/2 cup of white sugar, the brown sugar, half and half, and 1/4 teaspoon of salt in a saucepan. Bring to a boil, reduce heat to medium-low, and boil, stirring constantly, until the mixture thickens to a syrup, 5 to 10 minutes. A candy thermometer will read 220 degrees F (105 degrees C). At that point, stir in butter, 1 cup of pecans, and vanilla extract. Continue to cook and stir until the syrup reaches 234 degrees F (110 degrees C). Allow the glaze to cool for 5 minutes, then spread the warm glaze over the cake.

1 cup quick-cooking oats
1 ¼ cups boiling water
1 ⅓ cups all-purpose flour
1 (0.81 ounce) package instant vanilla pudding mix (such as Jell-O®)
2 teaspoons ground cinnamon
1 ½ teaspoons salt
1 teaspoon baking soda
½ teaspoon ground cloves
½ teaspoon ground allspice
1 cup packed brown sugar
1 cup white sugar
½ cup butter
2 eggs
1 cup shredded coconut
1 medium Granny Smith apple - peeled, cored, and diced
½ cup butter
1 cup packed brown sugar
4 tablespoons reduced-fat coconut milk
1 cup shredded coconut
1 cup pecans

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch baking pan.
  • Place oats into a bowl and cover with boiling water. Set aside.
  • Sift flour, pudding mix, cinnamon, salt, baking soda, cloves, and allspice together in a small mixing bowl. Set aside.
  • Beat brown sugar, white sugar, and butter together using an electric mixer until fluffy. Beat in eggs, 1 at a time, until combined. FOR THE CREAM CHEESE FILLING:
8 oz cream cheese
1 egg
1/4 c butter, softened
1/2 c granulated sugar
2 Tbsp all-purpose flour
1 tsp vanilla
FOR THE CAKE:
1 c chopped pecans
1 1/2 lb apples, peeled and chopped (I used galas)
3 c all-purpose flour
1 c granulated sugar
1 c packed brown sugar
2 tsp cinnamon
1 tsp nutmeg
1/2 tsp allspice
1 tsp salt
1 tsp baking soda
3 eggs, beaten
3/4 c canola oil
3/4 c unsweetened applesauce
1 tsp vanilla
FOR THE PRALINE FROSTING:
1/2 c packed brown sugar
1/4 c butter
3 Tbsp milk
1 c confectioners' sugar
1 tsp vanilla
additional pecans for garnish

Steps:

  • 1. Pre-heat the oven to 350 degrees. Grease and flour a 14-cup bundt pan.
  • 2. Start by toasting your pecans in the oven for 8 - 10 minutes or until fragrant. Be sure to toss half way through cooking time. Set aside when they are done.
  • 3. Prepare filling: Beat butter, cream cheese, and sugar until light and fluffy. Stir in egg, vanilla, and flour and mix until smooth. Set aside.
  • 4. Prepare cake: In the bowl of an electric mixer, fitted with the paddle attachment, beat sugars, canola oil, and applesauce. Add in the eggs, one by one. Stir in vanilla.
  • 5. In a separate bowl, combine flour, spices, salt and baking soda.
  • 6. Working in batches, add this to your wet mixture.
  • 7. Remove bowl from mixer and fold in pecans and apples.
  • 8. Baking: Place 2/3 of the batter into the bundt pan. Spoon in the cream cheese mixture and, using a paring knife, swirl around to incorporate evenly. Be sure to leave about an inch border, so that the cream cheese does not leak out while baking.
  • 9. Place the remaining 1/3 of the batter on top.
  • 10. Bake for 60 - 75 minutes until a toothpick comes out clean.
  • 11. Cool completely on a wire rack.
  • 12. Frosting the cake: Bring brown sugar, butter, and milk to a boil in a small saucepan, whisking constantly. Remove from heat and stir in vanilla. Be careful, as mixture will bubble up violently!
  • 13. Gradually whisk in confectioners' sugar. Allow mixture to harden slightly and pour over completely cooled cake. Garnish with additional pecans, if desired.

I don't think I fiddled with it much; maybe I upped the apple content in my never-ending quest for truely apple-y apple cake. I haven't seen another apple cake with the praline topping.

1/2 cup butter
1 cup dark brown sugar (I use Sucanat)
2 eggs
1 3/4 cups soft unbleached flour
2 teaspoons baking powder
1 teaspoon vanilla
4 -6 large apples
1 tablespoon cinnamon
2 tablespoons sugar
2 tablespoons butter
1/2 cup sugar
1 egg

Steps:

  • Preheat the oven to 350°F Line the bottom of a 9" springform pan with parchment, and butter the pan.
  • Cream the sugar and beat in the eggs, one at a time, and the vanilla.
  • Sift the flour and baking powder into the butter and sugar.
  • Beat them in to form a smooth batter.
  • Scrape the batter into the prepared springform pan.
  • Wet your hands and pat it evenly into the pan.
  • Mix the cinnamon and sugar.
  • Peel the apples and cut them into thin slices.
  • Toss them in the cinnamon sugar and push them, on end, into the batter.
  • At first they will seem to be sticking very far out of the batter, but the apples will make the level rise as you go.
  • When all the apples are in- pack them in there- press them down slightly, so none stick out more than 1/2".
  • Sprinkle any remaining cinnamon sugar over the top.
  • Bake the cake for 45 minutes.
  • Meanwhile, cream the remaining butter and sugar, and beat in the remaining egg.
  • Spread this over the top of the cake and bake for 15 minutes more.

1 1/4 tsp baking soda
1/4 tsp salt

1 1/2 stick challenge butter(soft)
1 c brown sugar firmly packed
1 c white dugar
5 eggs, separated( yolks from whites)
1/3 c canola oil
1 tsp vanilla extract
1 c buttermilk
5 apples peeled cored and chopped
1 pinch orange zest
1 c chopped pecans
PECAN PRALINE ICING
1/1/4 c brown sugar, firmly packed
3/4 c water
1 pt heavy cream
1/2 stick challenge butter
1 c pecans

Steps:

  • 1. Mix dry ingredients and set aside. Beat butter, sugars and vanilla until creamy.Slowly add canola oil and mix until incorporated.Separate egg yolks from egg whites and place yolks in separate bowl to beat with a fork. Add yolks to butter mixture.Place egg whites in refrigerator until chilled. Beat egg whites until stiff peaks form. Add flour to butter mixture one cup at a time , mixing until just incorporated. Add buttermilk and mix well. Fold in egg whites being careful not to deflate cake mixture. Add mashed cooked apples, pecans and orange zest, gently incorporate. Place batter in a large greased bundt pan. Bake at 350 for one hour or until toothpick or knife inserted in center comes out clean. Pecan Praline Icing Add brown sugar and butter to medium sauce pan, turning the heat to medium. Sugar mixture will turn a dark amber color. Cook until reaching the soft ball stage and mixture thickens. Add water, heavy cream and pecans while continuing to stir. Pour this mixture over cake.
