POWERHOUSE EGG CASSEROLE

I love using leftovers and hate throwing away veggies. So when my father-in-law gave us more farm-fresh eggs than we could eat, I decided to make a breakfast casserole. This was everything I had on hand in my fridge, but feel free to make it your own.

Tips:

  • Prep your ingredients in advance: Chop your veggies, grate your cheese, and measure out your ingredients before you start cooking. This will make the process go much smoother and faster.
  • Use fresh, high-quality ingredients: The better the ingredients, the better your casserole will taste. Look for fresh, in-season vegetables and high-quality cheese.
  • Don't overcook your eggs: Eggs are delicate and can easily become overcooked. Cook them just until they are set, or they will become rubbery.
  • Season your casserole well: Don't be afraid to add some salt, pepper, and other seasonings to your casserole. This will help to bring out the flavors of the ingredients.
  • Serve your casserole immediately: Casseroles are best served hot and fresh out of the oven. If you need to make it ahead of time, reheat it gently before serving.

Conclusion:

Powerhouse Egg Casserole is a versatile and delicious dish that can be enjoyed for breakfast, lunch, or dinner. With its protein-packed eggs, hearty vegetables, and gooey cheese, it's a meal that will keep you feeling full and satisfied. Whether you're looking for a quick and easy weeknight meal or a special occasion brunch, this casserole is sure to be a hit.
