Number Of Ingredients 7

2 cups old-fashioned rolled oats
1 cup extra-crunchy peanut butter
1/2 cup raw honey
1/2 cup mini chocolate chips
1/2 cup dried cranberries
1/2 cup sunflower seeds
2 tablespoons flax seed

Steps:

  • In a food processor, pulse the oats, peanut butter, honey, chocolate chips, cranberries, sunflower seeds and flax seeds until fully combined. Cover and refrigerate for 30 minutes.
  • Line a baking sheet with waxed paper. Form balls from the mixture (about 1 1/2 tablespoons each) and place them on the baking sheet. Refrigerate for 30 minutes before serving.

1 cup creamy peanut butter
1 cup corn flakes, plain
3/4 cup powdered soy protein concentrate
1/4 cup brown sugar, firmly packed
3/4 cup semi-sweet chocolate chips, finely chopped
1 cup sweetened coconut, toasted

Steps:

  • Combine all but coconut. Work with your hands to combine well.
  • Scoop out spoonfuls and roll into golf ball sized balls.

1/2 cup (10g) PUFFED MILLET
1 cup (20g) PUFFED KAMUT or PUFFED RICE
1/2 cup (90g) diced DRIED PLUMS (prunes; see Note)
1/3 cup (60g) SEMISWEET CHOCOLATE CHIPS
1/4 cup (35g) SESAME SEEDS
1/3 cup (80g) SUNFLOWER BUTTER, at room temperature
1/2 cup (125ml) HONEY
3/4 cup (40g) shredded unsweetened COCONUT

Steps:

  • 1. In a large bowl, toss together the puffed millet and puffed kamut or rice. Add the dried plums, chocolate chips, and sesame seeds.
  • 2. Stir in the sunflower butter and the honey. You should have a nice sticky mess! Cover the bowl with plastic wrap and refrigerate for 30 minutes.
  • 3. Place the coconut in a small bowl. Using a tablespoon, scoop the mixture and form it into 1-inch (2.5cm) balls with your hands. Roll the balls in the coconut and transfer to a container.
