  • Preheat the oven to 400 degrees F (200 degrees C).

1/4 cup fresh orange juice (from 1 large orange)
1/4 cup ketchup
1/4 cup orange marmalade
1/4 cup apple cider vinegar
2 tablespoons low-sodium soy sauce
1 tablespoon Dijon mustard
1/2 teaspoon Chinese five-spice powder
1/2 teaspoon paprika
1/4 teaspoon freshly ground black pepper
1 garlic clove, minced
8 skin-on chicken drumsticks (about 1 pound)
Chopped fresh parsley, for sprinkling

Steps:

  • Add the onion, orange juice, ketchup, orange marmalade, apple cider vinegar, soy sauce, Dijon, five-spice, paprika, black pepper and garlic to a large resealable plastic bag. Close the bag and shake to incorporate. Add the chicken drumsticks to the bag. Reseal and marinate for at least 1 hour in the refrigerator. PLAN/PURCHASE
THE WINGS
3 Tbsp grapeseed oil
1 tsp sriracha sauce
1 tsp baking soda
1 tsp white pepper, freshly ground
1/2 tsp salt, kosher variety
12 - 14 chicken wings, separate the drums from the flats, then freeze the tips and reserve for making stock
THE SAUCE
1/2 c orange marmalade
1 Tbsp sweet chili sauce
2 tsp sesame oil
1 Tbsp tamari sauce
1 tsp coconut sugar
1 tsp ginger powder

  • 1. PREP/PREPARE
  • 2. Gather your Ingredients (mise en place).
  • 3. Mix all the ingredients for the wings together.
  • 4. Throw in the wings, toss, and allow to rest for 30 minutes.
  • 5. Place a rack in the middle position, and preheat the oven to 400f (205c).

4 lb chicken wings
1/2 c orange marmalade
3/4 c hot sauce
ADDITIONAL BASTING SAUCE
1/2 c hot sauce
1/2 c orange/marmalad
1 c reserved juices from pressure cooker

Steps:

  • 1. In a 2-cup measuring cup mix together 3/4 cup hot sauce and 1/2 cup orange marmalade.
  • 2. In the pot that comes with the pressure cooker, toss the chicken wings with the combined sauce from step 1.
  • 3. Follow your pressure cooker directions, but simply lock the lid, set the steam/pressure release setting so it is closed, and hit the setting for Soups&Stews. (10-15 minutes depending on your cooker. Mine warms up for about 5 min and then cooks for 10 min. Total process is 15 min)
  • 4. After the cooking process is complete, immediately release steam by opening the value setting on your machine. Release all steam and then open and remove the wings and arrange as many as will fit on a broiling pan.
  • 5. Pour out the liquid juices and sauce inside the pressure cooker into large measuring cup. Let sit for a few minutes so that the grease or fat rises to the top. Skim that off and dispose.
  • 6. Mix 1 cup of the reserve defatted juices from step 5 with 1/2 cup of additional hot sauce and 1/2 cup of marmalade. Baste the chicken wings with this mixture and put under a broiler for 5-10 minutes. Make sure the oven rack is not on the first row below the broiler, but the second row. You don't want them to cook too fast and burn. Keep an eye on them. Baste once or twice while under the broiler. Take out and turn the wings over, re-baste and return under broiler. Cook till crispy looking and just starting to burn. Remove and place on a plate while you repeat the process for the rest of the wings that didn't fit on your broiling pan the first time. Serve immediately.

ORANGE MARINADE
1 c fresh squeezed o.j. or regular
1/3 c fresh lime juice
2 tsp hot sauce
2 clove garlic, finely chopped or pressed
1 Tbsp canola oil
2 tsp salt
24 chicken wings and /or drummies
STICKY ORANGE GLAZE
1 c orange marmalade
1/4 c fresh orange juice
2 Tbsp orange zest
4 clove garlic, finely chopped or pressed
2 Tbsp soy sauce
3 Tbsp brown sugar
2 tsp salt
1/2 tsp black pepper

  • 1. Add all of the marinade ingredients to blender and process till almost smooth.
  • 2. Pour marinade into a large ziplock bag or bowl with lid. Add chicken and let marinate in refrigerator at least 2 hours but overnight is best !
  • 3. Pre-heat your grill on medium high heat. Add chicken and cook 20 min or until chicken is cooked through.
  • 4. Mix together all ingredients for the STICKY ORANGE GLAZE. ***Reserve 1/3 Cup of glaze for use as a dipping sauce.
  • 5. Remove chicken from grill and put on a foil lined cookie sheet.
  • 6. Turn oven on low broil with rack lowered.
  • 7. Brush glaze over chicken wings and put into oven. WATCH carefully, this should take about 4 or 5 min. depending on broiler.
  • 8. Remove from oven when glaze is bubbly and slightly turning color.
  • 9. Place on a large platter and serve with reserved "dipping" sauce and cut up vegetables such as celery and carrots. Enjoy

1/2 cup(s) tamari sauce, or liquid aminos

  • I like making these in an ovenproof skillet; however, when I am doing large batches, I defer to baking pans lined with parchment paper.
  • Gather your ingredients (mise en place).
