POULET NOMADE - NOMAD'S CHICKEN - HERB POACHED CHICKEN IN A JAR
I found this amazing recipe in a French magazine, (Femme Actuelle) whilst waiting in the doctor's surgery! It's such a great idea for portable chicken, hence its name. Chicken breasts are poached in a court-bouillon broth with garlic and thyme; the chicken is then mixed with fresh chèvre (goat's cheese) and artichokes and is popped into a kilner jar with a little flavoured oil. Eh voila! It is ready to pack into a hamper for a picnic! C'est parfait! Serve this wonderful moist chicken salad mixture with crusty baguette or artisanal bread, using the flavoured oil for dipping and dunking! Can be stored once cooked in the fridge for 1 to 2 days. (In the sealed kilner jar.) If you have fresh artichokes available, use them in preference to tinned ones.

Steps:
- Gently poach the chicken breasts in a saucepan with the water, into which the court-bouillon cube has been dissolved. Poach them over a low to medium heat for 12 to 15 minutes, then turn off the heat, cover the saucepan with a lid and allow to cool in the liquid for about 30 to 45 minutes. (You can add a little white wine to the water if you wish, reduce the water to 750ml and add 250ml of white wine).
- Once cool enough to handle, drain and cut the chicken into small bite sized pieces.
- In a bowl, crush the fresh chèvre (goat's cheese) with a fork, until roughly crumbled with the leaves from the fresh thyme sprigs. Add the black pepper, salt and garlic to taste. Mix gently. Then add the chicken pieces and then the chopped artichoke hearts and the toasted slivered almonds. Mix gently before adding the oil - then decant the chicken salad into a clean/sterile glass jar, such as a kilner jar, which has an airtight lid.
- Seal with the lid before storing in the fridge until needed, for up to 1 to 2 days. Turn the jar upside down a few times throughout the day making sure that the oil covers the chicken.
- Serve at the table from the jar or on a picnic with plenty of paper napkins and crusty, rustic bread! Salad leaves would also be a great addition to this chicken salad.

POULET à LA NORMANDE
This simple, classic braise from northern France brings together the fall flavors of sweet apples, yeasty cider, cream and chicken. The only trick is flambéing the Calvados or brandy, which gives it a toasty flavor - it's literally playing with fire, so if you'd prefer not to do that, you can stay safe and get very similar results by pouring the liquor in off-heat, and gently simmering it to evaporate the alcohol.

Steps:
- Pat the chicken very dry with paper towels, and season well with salt and pepper. Heat the fat in a large Dutch oven or deep skillet over medium-high until shimmering. Brown the chicken, in batches if necessary, skin side down until deep golden, 6 to 8 minutes, then flip, and sear the other side until golden, another 3 minutes.
- If flambéing: Make sure there is nothing flammable near or above your stove. Gently warm the Calvados in a saucepan over medium heat. When the chicken is well browned, protect your hand, and use a long kitchen match to light the liquor on fire, then carefully pour it into the chicken pan. The flame can shoot over 2 feet high, so be careful. Cook until the flame subsides. If not flambéing: Once the chicken is browned, turn off the heat, and add the Calvados. When the sizzling subsides, turn the heat on to medium low, bring the liquid to a simmer and cook for 4 minutes to evaporate the alcohol.
- Add the cider and onions, and bring to a boil over medium heat. Turn the heat down to a very gentle simmer. Quickly peel and core the apples, and cut them into 1 1/2-inch chunks, and place them on top of the chicken. Cover the pan, and cook, checking occasionally to ensure the liquid is maintaining a gentle simmer, not boiling, until the chicken is just cooked through, 35-40 minutes.
- Remove the chicken, onions and apples to a platter, and cover. Make a slurry with the cornstarch and 3 tablespoons of cold water. Stir this into the braising liquid, and bring to a simmer for 1 minute, until thickened. Stir in the crème fraîche, and season the sauce with salt to taste, replace the chicken, onions and apples in the sauce and serve with crusty bread and a salad.

Tips:
- Choose the right jar: Use a jar that is large enough to hold the chicken and the poaching liquid, but not so large that the chicken is swimming in liquid. A quart-sized jar is a good size for a whole chicken.
- Prepare the chicken: Rinse the chicken inside and out and pat it dry. Remove any excess fat or skin. You can also spatchcock the chicken, which will help it cook more evenly.
- Add aromatics: Add aromatics to the jar to flavor the poaching liquid. Common aromatics include onions, carrots, celery, garlic, and herbs such as thyme, rosemary, and bay leaves.
- Use a flavorful poaching liquid: The poaching liquid should be flavorful enough to infuse the chicken with flavor. A good rule of thumb is to use a liquid that you would enjoy drinking on its own. Chicken broth, white wine, and water are all good options.
- Cook the chicken slowly: Poaching is a gentle cooking method that takes time. Cook the chicken over low heat until it is cooked through. The internal temperature of the chicken should reach 165 degrees Fahrenheit.
Conclusion:
Poulet Nomade, or Nomad's Chicken, is a simple but flavorful dish that is perfect for a weeknight meal. The chicken is poached in a jar with aromatic vegetables and herbs, resulting in a tender and juicy chicken that is infused with flavor. This dish is also very versatile and can be served with a variety of sides, such as rice, potatoes, or vegetables.
