EASY POT STICKER SOUP

Easy Pot Sticker Soup image

Since my husband and I have soup often, I'm always coming up with something new. I saw pot stickers in the freezer and decided to feature them in an Asian soup. The results were delicious. Rice vinegar provides just the right tang, and the green onions and carrots add color. Stir in chopped cabbage or bok choy if you'd like. A little sesame oil goes a long way, but you can always add a bit more. -Darlene Brenden, Salem, Oregon

LING LING POT STICKER SOUP

Ling Ling Pot Sticker Soup image

This yummy soup uses Ling Ling brand frozen pot stickers that I buy from Costco. Instead of frozen veggies, I use fresh ones and add water chestnuts and bamboo shoots. If using fresh....it will depend on how crisp you like them...as to when you add them to the soup to cook). This is something my teenage boys really like!

2 cups water
8 cups frozen mixed vegetables
40 ling ling chicken pot stickers, frozen
2 tablespoons grated fresh ginger
1/3 cup dipping sauce, thawed (2 packets=approximately 1/3 C. included with the Ling Ling Chicken Pot Stickers)
1/4 cup cornstarch
2 teaspoons chopped scallions, plus more
scallion, for garnish
salt and pepper

Steps:

  • In a large pot combine broth and water. Bring to a boil. Add frozen Ling Ling Pot Stickers. Return to a boil and cook 4 minutes, stirring occasionally.

  • In the meantime, mix Ling Ling Potsticker Sauce with cornstarch in a small bowl.
  • Add the sauce mixture to the soup and bring to a simmer. Season with salt and pepper. Garnish with a few more scallions.

Tips:

  • Use wonton wrappers for a quicker option: If you're short on time, you can use wonton wrappers instead of making your own dumpling wrappers. Just be sure to cook them for a shorter amount of time, as they are thinner than traditional dumpling wrappers.
  • Don't overcrowd the pot: When cooking the dumplings, be sure to not overcrowd the pot. This will prevent them from cooking evenly and sticking together.
  • Use a variety of vegetables: Feel free to use a variety of vegetables in your dumpling soup, such as carrots, celery, broccoli, or bok choy.
  • Add some protein: If you want to add some protein to your dumpling soup, you can add some cooked chicken, shrimp, or tofu.
  • Serve with your favorite toppings: When serving your dumpling soup, be sure to add your favorite toppings, such as green onions, cilantro, or chili oil.

Conclusion:

This potsticker dumpling soup is a delicious and easy-to-make meal that is perfect for a cold winter day.
