POTLUCK ORZO PASTA SALAD

Potluck Orzo Pasta Salad image

I made this for a work potluck- and was asked repeatedly for the recipe, so I put it up here. I didn't take home very much of it! The sesame oil and pine nuts are a bit expensive, but I think they are what makes the recipe. It's very easy and fairly quick to prepare.

Tips:

  • Choose the right pasta. Short pastas like penne, rotini, or macaroni are best for pasta salad because they hold the sauce and toppings well.
  • Cook the pasta al dente. This means cooking it slightly less than the recommended time on the package. Al dente pasta will still have a slight bite to it, which will help it hold its shape and not get mushy in the salad.
  • Rinse the pasta with cold water. This will stop the cooking process and help prevent the pasta from sticking together.
  • Use a variety of vegetables. This will add color, flavor, and texture to your salad. Some good choices include cherry tomatoes, cucumbers, bell peppers, carrots, and celery.
  • Don't be afraid to add protein. Cooked chicken, shrimp, or tofu can all be added to pasta salad for a more filling and satisfying meal.
  • Use a flavorful dressing. A simple vinaigrette or Italian dressing is a good choice. You can also use a store-bought dressing, but be sure to taste it first and adjust the flavor to your liking.
  • Chill the salad before serving. This will help the flavors to meld and the salad will be more refreshing.

Conclusion:

Pasta salad is a versatile and delicious dish that can be enjoyed for lunch, dinner, or a potluck. By following these tips, you can make the best pasta salad that everyone will love. So next time you're looking for a quick and easy meal, give pasta salad a try.
