POTATO LEEK GRATIN
Layer thinly sliced potatoes in a gratin dish, and then take your time sautéing the leeks, letting them turn a little golden and crisp around the edges, which brings out their sweetness. Add the leeks to the potatoes, and using the same pan in which you cooked the leeks, scrape up the brown bits at the bottom of the pan with a mix of cream, garlic, thyme and nutmeg, pouring that over the potatoes and leeks.

Tips:
- Choose the right potatoes: Waxy potatoes, such as Yukon Gold or Red Bliss, hold their shape well and won't become mushy when cooked. Avoid starchy potatoes, such as Russets, which are better for baking or mashing.
- Slice the leeks thinly: This will help them cook evenly and quickly.
- Don't overcrowd the pan: If you overcrowd the pan, the potatoes and leeks will steam instead of roast. Roast them in a single layer so they can get crispy.
- Use fresh rosemary: Fresh rosemary has a more intense flavor than dried rosemary. If you don't have fresh rosemary, you can use 1 teaspoon of dried rosemary.
- Season generously: Don't be afraid to season the potatoes and leeks well. Salt, pepper, and garlic powder are all good choices.
- Roast until tender: The potatoes and leeks should be tender when pierced with a fork. The roasting time will vary depending on the size of the potatoes and leeks, so keep an eye on them.
Conclusion:
This recipe for potatoes with leeks and rosemary is a simple but delicious side dish that is perfect for any occasion. The potatoes and leeks are roasted until tender and crispy, and the rosemary adds a fragrant herb flavor. This dish is sure to be a hit with your family and friends.
