POTATOES APPLEYARD

Number Of Ingredients 9

7 good-sized potatoes
1/4 pound butter
1/4 pound mild Cheddar cheese, crumbled
1 large onion, minced
1/2 teaspoon pepper
1 teaspoon paprika
1 salt to taste
1/2 cup milk
1/2 cup cream

Steps:

  • Peel potatoes. Slice thin. Melt 2 tablespoons butter in a large iron frying pan. Put a layer of potatoes into pan. Dot with butter, sprinkle with cheese, onion, and seasonings. Repeat until you have 4 layers. Put extra butter on top layer. Now pour milk and cream into pan. The liquid should come up to the top layer but not cover it. It is somewhat difficult to give precise amounts of ingredients because size of potatoes and pans vary. If you're in doubt, be generous. Bake all in a preheated 450° oven for 10 minutes. Reduce heat to 350° and bake 35-40 minutes longer. The potatoes should absorb all the liquid and be brown on top and a glazed brown underneath. Cut into pie-shaped wedges on a hot platter. If the pan is thoroughly buttered to begin with, the wedges will come out with no trouble.

Tips:

  • Choose the right potatoes: Look for firm, unblemished potatoes that are about the same size so they cook evenly. Yukon Gold and russet potatoes are good choices for this recipe.
  • Parboil the potatoes: Parboiling the potatoes before roasting them helps to create a crispy exterior and a fluffy interior. Be sure to drain the potatoes well before roasting them.
  • Toss the potatoes with oil and seasonings: Before roasting, toss the potatoes with olive oil, salt, pepper, and any other desired seasonings. This will help them to brown and develop flavor.
  • Roast the potatoes at a high temperature: Roasting the potatoes at a high temperature will help them to crisp up and caramelize. Aim for a temperature of 400°F (200°C) or higher.
  • Roast the potatoes until they are tender and browned: The potatoes are done roasting when they are tender on the inside and browned on the outside. This usually takes about 20-30 minutes, but can vary depending on the size and type of potatoes.

Conclusion:

Roasted potatoes are a versatile side dish that can be enjoyed with a variety of meals. They are easy to make and can be customized to your liking. With a few simple tips, you can make perfect roasted potatoes every time.
