1/4 cup heavy cream
1/2 pound smoked salmon, julienne
1/4 cup brunoise red onions
2 tablespoons chopped chives
Drizzle extra-virgin olive oil

Time 40m

Number Of Ingredients 11

3 tablespoons extra-virgin olive oil
3 garlic cloves, minced
1 small leek, white and pale-green parts only, thinly sliced and rinsed well
1 tart green apple, such as Granny Smith, cored, peeled, and cut into 1-inch chunks
1 celery stalk, thinly sliced
1 teaspoon finely grated fresh ginger
2 pounds sweet potatoes, peeled and cut into 1-inch cubes
6 cups chicken stock
1 medium canned chipotle chile in adobo sauce
Coarse salt and freshly ground pepper
1/2 cup salted pepitas (green hulled pumpkin seeds)

Steps:

  • Heat oil in a large pot over medium heat. Cook garlic and leek until soft and translucent, about 4 minutes. Add apple, celery, and ginger, and cook for 3 minutes. Add sweet potatoes and stock, and simmer until sweet potatoes are tender, about 15 minutes. Add chipotle chile.
  • Working in batches, transfer mixture to a blender, and puree until smooth, transferring soup to a large bowl as you work. (For safety, remove cap from hole in lid, and cover with a dish towel to prevent spattering.) Season with salt and pepper. Sprinkle with pepitas before serving.

Tips:

  • Choose the right potatoes: Yukon Gold or russet potatoes are ideal for this soup as they break down easily, creating a creamy texture. However, you can also use other types of potatoes, such as red or white potatoes.
  • Don't overcrowd the pot: When cooking the potatoes, make sure to not overcrowd the pot. This will prevent them from cooking evenly and may result in a soup that is too thick or lumpy.
  • Season the soup well: Don't be afraid to season the soup to your liking. Some suggested seasonings include salt, pepper, garlic powder, onion powder, and paprika. You can also add a bay leaf or two for extra flavor.
  • Use a variety of toppings: Once the soup is cooked, you can top it with a variety of ingredients to add flavor and texture. Some popular toppings include chopped green onions, bacon bits, shredded cheese, sour cream, and croutons.

Conclusion:

This potato soup with smoky links is a delicious and comforting soup that is perfect for a cold winter day. It is easy to make and can be tailored to your liking. With its creamy texture, smoky flavor, and variety of toppings, this soup is sure to be a hit with everyone who tries it. So next time you're looking for a hearty and satisfying meal, give this potato soup with smoky links a try.
