6 thick slices bacon
1 ½ teaspoons olive oil
½ cup chopped onion
½ cup chopped carrots
1 stalk celery, chopped
4 cups low fat, low sodium chicken broth
4 cups cubed potatoes
⅛ teaspoon cayenne pepper
½ cup shredded Cheddar cheese
½ teaspoon kosher salt

Steps:

  • Cook bacon until crisp in 3-quart saucepan, remove and drain well on paper towels. Discard bacon grease and wipe pan thoroughly with paper towel.
  • Meanwhile, prepare vegetables. Add olive oil to saucepan and add onion, carrot, and celery as they are cut up. Saute until onion is soft but not brown, about 3-4 minutes.
  • Stir in chicken broth, potatoes, and pepper; bring to a boil, reduce heat, and simmer, covered, until potatoes are tender, about 10-15 minutes.
  • Stir in cheese, heating just until melted--do not boil. Chop bacon and add to soup. Adjust seasoning to taste by adding salt, if desired. Serve at once.

We just adore the creaminess of this potato soup. Filled with potato flavor, creamy and so good. The cream cheese gives the soup a unique flavor and adds to the creaminess. This is warm and hearty. It can stand on its own, but is perfect with a sandwich or salad, too. Any level cook can make this delicious meal.

6-7 large potatoes, peeled and cut into bite-size pieces (a little less than 5 lbs)
1 medium onion, chopped
2 can(s) chicken broth (14.5 oz each)
1 can(s) cream of chicken soup (10.75 oz)
1 can(s) cream of celery soup (10.75 oz)
8 oz cream cheese, softened & cubed
1 tsp garlic powder
1/2 stick unsalted butter
salt & pepper, to taste
1/2 c milk, optional (for thinning, but I never use it. I like thick soup!)
1 pkg real bacon bits or 6 cooked crumbled bacon (use the amount you like...we love bacon around here!)
cheddar cheese, shredded
green onions

Steps:

  • 1. Cook potatoes and onion in chicken broth along with just enough water to cover potatoes and onions.
  • 2. Cook until tender. Once tender, I used a potato masher to mash a few to make the soup kinda thick. (Don't mash ALL the potatoes because you still want chunks of potato in the soup!)
  • 3. Add cubes of cream cheese. Remove from heat until cheese is melted. Return to low/medium heat.
  • 4. Add half the bacon, soups, butter, and spices.
  • 5. Cook for another 10 or so minutes. This is when you can add the optional milk if you want a thinner soup.
  • 6. Garnish with shredded cheddar cheese and bacon pieces. I also used a little green onion to garnish. ***I added a small handful of shredded cheddar cheese to the soup when adding the bacon, soups, butter & spices... just because we love the cheddar taste! ****

8 slices bacon, chopped
4 medium size leeks, white part only, chopped (about 6 cups)
5 large garlic cloves, chopped small
1 tablespoon fresh thyme leaves, stripped from the stems (chopped)
1 tablespoon Hungarian paprika
3/4 teaspoon salt
1/2 teaspoon white pepper
4 lbs yukon gold potatoes, peeled and diced (4 large potatoes)
6 cups chicken broth
3 drops Tabasco sauce
1 cup shredded extra-sharp cheddar cheese
1 cup shredded parmigiano-reggiano cheese
1/2 cup chopped scallion (to garnish)
1/2 cup sour cream (to garnish)
1/2 teaspoon Hungarian paprika (to garnish)

Steps:

  • In a large heavy-bottomed cooking pot, cook the bacon over medium-high heat until golden brown, 3 to 4 minutes.
  • Remove the cooked bacon to a paper towel-lined plate and reserve.
  • While the bacon is cooking, fill a large bowl with cold water and add the chopped leeks and swish vigorously to release any possible grit.
  • Using a slotted spoon, remove the leeks to a paper towel-lined bowl to absorb any water.
  • Add the leeks and garlic to the bacon fat in the cooking pot and cook until tender, 4 to 5 minutes.
  • To the cooking pot, add thyme, paprika, salt, pepper, potatoes, chicken broth, and Tabasco sauce and bring up to a bubble over high heat.
  • Reduce heat to medium and simmer until the potatoes are cooked through, 8 to 10 minutes.
  • When the potatoes are tender, using an immersion blender or puree in a food processor until the soup is smooth.
  • Add cheddar cheese and Parmesan cheese and heat until melted, whisking all the time until well blended, 3 to 4 minutes.

1 kg potato, washed,unpeeled and quartered
2 red onions, peeled,each cut into 6 wedges
100 g blue cheese, crumbled
