Categories     Breakfast

Time 10h15m

Yield 12

Number Of Ingredients 11

1 lb smoked spicy sausage (andouille, chorizo or kielbasa), cut into 3/8-inch slices
1 large onion, chopped (3/4 cup)
1 medium red bell pepper, chopped (1 cup)
1 medium green bell pepper, chopped (1 cup)
3 cloves garlic, finely chopped
1 bag (20 oz) refrigerated home-style potato slices
1/2 teaspoon salt
1/2 teaspoon pepper
3 cups shredded sharp Cheddar cheese (12 oz)
12 eggs
3/4 cup milk

  • Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In 12-inch skillet, cook sausage over medium heat 5 to 7 minutes, stirring occasionally, until sausage begins to brown; drain if necessary. Add onion; cook 2 to 3 minutes or until slightly softened. Tips:

  • Use a good quality sausage. The flavor of the sausage will come through in the casserole, so it's important to use a sausage that you enjoy. If you can, use a local or artisanal sausage.
  • Don't overcook the potatoes. The potatoes should be cooked through but still slightly firm. If you overcook them, they will become mushy and the casserole will be less enjoyable.
  • Use a deep casserole dish. The casserole will rise as it bakes, so it's important to use a casserole dish that is deep enough to accommodate the expansion.
  • Don't be afraid to experiment. There are many different ways to make a potato, sausage, and egg breakfast casserole. Feel free to add your own favorite ingredients or adjust the seasonings to taste.

Conclusion:

Potato, sausage, and egg breakfast casserole is a delicious and easy-to-make dish that is perfect for a weekend brunch or holiday meal. It's also a great way to use up leftover potatoes and sausage. With a few simple ingredients and a little bit of time, you can create a hearty and satisfying casserole that the whole family will love.
