POTATO SALAD WITH ROASTED RED PEPPERS AND BACON

Potato Salad With Roasted Red Peppers and Bacon image

This potato salad has tons of flavor! When I made this I increased the dressing ingredients slightly. Plan ahead the cooked potatoes need to chill until cold, and the complete salad needs to chill for a minimum of 4 hours, even better if chilled overnight.

Tips:

  • To make the roasted red peppers, preheat your oven to 400°F (200°C) and toss the peppers with olive oil, salt, and pepper. Roast for 20-25 minutes, or until the peppers are tender and slightly charred.
  • For a creamy potato salad, use Yukon Gold or red potatoes. These potatoes have a high starch content, which will help to thicken the dressing.
  • If you don't have time to roast the red peppers, you can use jarred roasted red peppers instead. Just be sure to drain them well before adding them to the salad.
  • For a tangy dressing, use a combination of mayonnaise, sour cream, and Dijon mustard. You can also add a splash of vinegar or lemon juice for extra flavor.
  • If you want to add some crunch to the salad, add some chopped celery, onion, or hard-boiled eggs.

Conclusion:

Potato salad with roasted red peppers is a classic summer side dish that is easy to make and always a crowd-pleaser. With its creamy dressing, tangy roasted red peppers, and tender potatoes, this salad is sure to be a hit at your next potluck or barbecue.
