  • Wash and slice potatoes (and onions/mushrooms if using).

1/4 cup thinly sliced green onions
6 slices ready-to-serve fully cooked bacon, chopped
3/4 teaspoon salt
1/8 teaspoon pepper
2 tablespoons butter
1 cup shredded cheddar cheese

  • In a large bowl, toss potatoes with green onions, bacon, salt and pepper. 4 medium potatoes, julienned
3 carrots, julienned
1/3 cup chopped red onion
2 tablespoons butter
1/2 teaspoon salt, optional

2 lb large shrimp, peeled and deveined
1 1/2 lb smoked sausage, thinly sliced
3 ears of fresh corn on the cob
1 lb red skinned potatoes, cut into cubes
1/2 stick butter
2 Tbsp cajun seasoning
1/4 c chopped fresh parsley
salt & pepper to taste
butter flavored cooking spray

Steps:

  • 1. Preheat oven to 475 degrees or Grill on high heat.
  • 2. par-boil potatoes for about 10 min.
  • 3. Cut corn into quarters
  • 4. Spray aluminum foil sheets about 12 inches long with butter flavor cooking spray.
  • 5. Divide potatoes, corn, shrimp and sausage evenly onto 6-8 pieces of foil about 12 inches per sheet. Sprinkle with salt & pepper, Cajun seasoning and fresh parsley. Place a pat of butter on top of each sheet.
