BAKED POTATO PUFFS
The hardest line cook job I ever had was at the Carnelian Room, where on a busy night I'd prepare over 250 steaks and chops. The biggest challenge was frying French potato puffs to order. Called pommes dauphine, it's one of the finest foods ever invented. To save your kitchen from that deep fryer smell, I wanted to try a baked version. I was very happy with the results. Even though they weren't as dark and crispy as the fried version, the inside was virtually identical. Enjoy these as a warm snack with a dip, or to go alongside some eggs or grilled steak.

UPPER PENINSULA PASTIES
I grew up in Michigan's Upper Peninsula, where many people are of English ancestry. Pasties-traditional meat pies often eaten by hand-are popular there. -Carole Lynn Derifield, Valdez, Alaska

POTATO PIE
I've collected a large variety of recipes using our farm's crop of potatoes. This is a favorite. It has a wonderful pastry crust and is chock-full of sliced potatoes with onion, parsley and seasoning.-Patricia Wells, Riverhead, New York

SWEET POTATO PASTRY CRUST (VEGAN / GLUTEN FREE)
This is a recipe I've modified from www.piginthekitchen.co.uk. If you do not need it to be gluten free then you can also make this recipe using regular pastry flour and no xanthan gum which I've also done and it turned out great. I've used it as a crust for apple pie and shoo fly pie. NOTE: this crust is slightly chewier than a regular pastry crust made with butter, if you want it to crisp up perhaps try brushing the edges with a non dairy spread.

Steps:
- Cook the sweet potato by steaming or boiling, then mash it until smooth (discard skin). Put it in a bowl and refrigerate at least 2 hours before starting the pie.
- Put the rice flour, xanthan gum and baking powder into a large mixing bowl and stir them all together.
- Take the sweet potato out of the fridge and add the dry ingredients into the mash.
- Sprinkle the counter with a few tablespoons of rice flour and knead the dough until it's no longer sticky.
- Press the dough into a ball and then cover and refrigerate for another 30 minutes (I skip this step if I need to make the pie immediately).
- Take the dough out of the fridge and roll it out on a floured surface, then press it into your greased pie pan. (I sometimes need a spatula to help pick it all up at once, it's more fragile than regular pastry dough and may need a little help being transferred from the counter to the pan).
- Bake the shell right away or fill it first with the fruit or pie ingredients of your choice. Baking time depends on the kind of pie but it's usually around 40 minutes.

Steps:
- Put the potatoes in a saucepan; add cold water to cover and salt. Bring to a boil and let simmer 20 minutes or longer, until the potatoes are tender. Drain.
- When the potatoes are cool enough to handle, peel them. Grate or, preferably, put them through a food mill or ricer. Do not use a food processor, or they will become gummy. There should be about 1 3/4 cups, the amount needed.
- Cut the bacon into 1/4-inch cubes. Add the cubes to a saucepan and cook, stirring constantly, until rendered of fat and golden brown.
- Add the onion and cook, stirring, until lightly browned.
- Put the potatoes in a mixing bowl and add the bacon mixture, the parsley, salt and pepper. Add the egg yolks and blend.
- Preheat the oven to 425 degrees. Melt the butter.
- Carefully lay out one rectangle of phyllo-strudel pastry. Brush it with half the butter. Carefully lay a second rectangle on top of the first. Brush it all over with the remaining butter.
- Spoon the potato mixture onto the bottom half of the strudel layer, leaving a 1-inch margin right and left. Using a spatula, carefully spread the mixture over the bottom half of the pastry (remember that this pastry tears easily). Fold over right and left edges of the pastry. Roll the dough bottom to top to enclose the filling in a sausagelike shape.
- Butter a large baking sheet. Carefully transfer the potato-filled pastry, seam side down, onto it.
- Place in the oven and bake 15 to 20 minutes or until piping hot throughout and golden brown on top. Cut on the diagonal into slices about 1 1/2 inches thick and serve.

Tips:
- Choose the right potatoes: Use starchy potatoes like Russet or Idaho potatoes for a flaky and crispy pastry dough.
- Cook the potatoes properly: Boil or steam the potatoes until they are tender and can be easily mashed.
- Mash the potatoes thoroughly: Make sure there are no lumps in the mashed potatoes, as this will affect the texture of the pastry dough.
- Chill the mashed potatoes: Chilling the mashed potatoes before using helps to firm them up and makes it easier to work with the pastry dough.
- Use a light touch: When mixing the pastry dough, use a light touch to avoid overworking the dough. Overworking the dough can make it tough and less flaky.
- Chill the pastry dough: After mixing the pastry dough, chill it for at least 30 minutes before using. This helps to make the dough easier to handle and prevents it from becoming too sticky.
- Bake the pastry dough at a high temperature: Bake the pastry dough at a high temperature (400°F or higher) to ensure that it rises and becomes flaky.
Conclusion:
Potato pastry dough is a delicious and versatile dough that can be used to make a variety of savory and sweet dishes. With its unique flavor and texture, potato pastry dough is sure to be a hit with your family and friends. So next time you're looking for a new and exciting way to use potatoes, give potato pastry dough a try!
