This makes a great side dish! You can add in some grated Parmesan cheese and salt to the sour cream mixture if desired. I always add in about 3-4 tablespoons mayo to the sour cream mixture but that is optional.

Tips:
- Choose the right potatoes: Select firm, all-purpose potatoes like Yukon Gold or Russet potatoes. Avoid waxy potatoes like Red Potatoes, as they tend to hold their shape and not break down as well.
- Slice the potatoes thinly: This will help them cook evenly and absorb the flavors of the other ingredients.
- Use a heavy-bottomed pot: This will help distribute heat evenly and prevent the potatoes from sticking.
- Don't overcrowd the pot: Cook the potatoes in batches if necessary to avoid overcrowding, as this will prevent them from cooking evenly.
- Season generously: Don't be afraid to add plenty of salt, pepper, and other seasonings to taste.
- Cook until golden brown: The potatoes should be tender on the inside and crispy on the outside.
- Garnish with fresh herbs: Chopped parsley, chives, or dill add a pop of color and freshness to the dish.
