CREAMY MUSHROOM-POTATO BAKE
The day I first made this, we'd invited a neighbor-a bachelor farmer-over, and I wanted to fix something hearty. It was a hit instantly. These days, our three sons enjoy it as a change from regular mashed potatoes. We've found that it's best served with beef...either with or without gravy. -Kathy Smith, Granger, Indiana

Tips:
- Choose fresh and flavorful ingredients. The quality of your ingredients will greatly impact the final dish, so be sure to use the best you can find. Look for firm, unblemished potatoes, meaty mushrooms, and ripe, juicy tomatoes.
- Don't overcrowd the pan. When cooking the potatoes, mushrooms, and tomatoes, be sure to give them enough space so that they can cook evenly. If you overcrowd the pan, the vegetables will steam instead of fry, and they won't develop as much flavor.
- Season to taste. Don't be afraid to adjust the seasonings in the recipe to suit your own taste. Add more salt, pepper, or herbs as desired.
- Serve immediately. This dish is best served hot, right out of the pan. It can be served as a main course or a side dish.
Conclusion:
This potato, mushroom, and tomato medley is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is packed with flavor and nutrients, and it can be customized to your own liking. So next time you're looking for a quick and healthy meal, give this recipe a try.
