1 lb potatoes (peeled and diced)
5 medium carrots (peeled and diced)
2 large leeks (cut into rounds)
6 garlic cloves (whole)
4 tbsp olive oil (extra virgin)
1 tbsp turmeric
½ tsp ground ginger
½ tsp garlic powder
½ tsp onion powder
½ tsp smoked paprika
salt
black pepper (freshly ground)
3-4 cups chicken or vegetable stock
heavy cream (for serving)
fresh herbs - parsley, basil or sage (for serving)
bread and butter (for serving)

Steps:

  • Preheat oven to 400°F. Peel and dice potatoes and carrots and cut leeks into rounds. Try to cut them roughly the same size so they can cook evenly.
  • Place the vegetables on a baking sheet lined with parchment paper. Drizzle with olive oil. Trim the top off the garlic cloves, drizzle with olive oil and wrap in aluminum foil.

1 lb carrot, peeled and diced
1 medium onion, finely chopped
1 red potatoes, diced
1 stalk celery, diced
2 cups vegetable stock
1/2 teaspoon paprika
1/2 teaspoon ground cumin
1/2 teaspoon turmeric powder
salt and pepper
1 teaspoon vegetable oil
1/8 teaspoon dried Italian herb seasoning
1/2 cup milk
1/4 cup cilantro, finely chopped

Steps:

  • Heat the vegetable oil.
  • Saute the onions till soft.

1 pound russet potatoes, peeled and diced
A bouquet garni made with a bay leaf and a few sprigs each thyme and parsley

3 tablespoons butter
1 large leek, white and half of the green, washed and diced
2 tablespoons flour
6 cups chicken stock
1 1/2 cups instant mashed potatoes
1 cup half-and-half
cheddar cheese or green onion, if desired

Steps:

  • Melt butter. Saute leek and carrot until leek is soft, about 10 minutes.
