Time 50m

Yield 10 serving(s)

Number Of Ingredients 9

3 lbs potatoes
2 eggs
1 teaspoon salt
3 tablespoons all-purpose flour or 3 tablespoons matzo meal
1/2 teaspoon baking powder
1 onion, minced
black pepper, to taste
paprika, to taste
vegetable oil (for frying)

Steps:

  • Wash and peel the potatoes.
  • Grate the potatoes with a grater or food processor.
  • (You can grate them into a bowl of salted water to keep them from discoloring. Otherwise they discolor about as fast as you can grate them, although it doesn't hurt anything if you use them right away). Drain off all liquid, and squeeze the excess liquid out by hand.
  • (Do this even if you don't soak them in the salted water.) Beat the eggs and mix with the grated potatoes and other ingredients, except the oil.
  • Heat about 1/2 inch of oil in a skillet over medium high heat until very hot.
  • Drop potato mixture by heaping tablespoons into oil (about 4 at a time).
  • Use a pancake turner to flatten them out.
  • Fry to golden brown on both sides (about 3 minutes per side).
  • Drain on paper towels.
  • Serve topped with applesauce or sour cream.

SUPER SIMPLE LATKES (POTATO PANCAKES)

Super Simple Latkes (Potato Pancakes) image

We love potato pancakes in our house, but until I came up with the idea to use pre-shredded frozen potatoes, they were a once a year thing at Hanukkah. Peeling, shredding and draining the potatoes were a real pain. Now that the hard work is done, we can eat them all year long!!! At Passover I will make them with Matzoh Meal instead of flour.

Categories     Breakfast

Time 30m

Yield 9 Latkes

Number Of Ingredients 9

1 (30 ounce) bag frozen potatoes (shredded)
1 cup sweet onion, finely diced
2 eggs, beaten
salt
1 teaspoon black pepper
3 tablespoons flour
vegetable oil (for frying)
sour cream, for topping
applesauce, for topping

Steps:

  • Defrost grated potatoes in a medium-size colander. Press with paper towels to remove excess moisture. There won't be much.
  • Add onion, eggs, salt, pepper and flour. Mixture should be thick and cohesive.
  • Pour about 1/4 inch of oil into a heavy-bottomed frying pan. I use an electric frying pan at 375 so it doesn't get too hot and burn the latkes.
  • Use about 2 Tablespoons potato mixture and place in the oil and press into a patty.
  • Fry for about 3 minutes. Flip and fry for another 3 or so minutes. If pancake cooks too fast, reduce oil's temperature. If it takes longer, turn the oil up so they don't get soggy. Repeat with remaining potato mixture.
  • Drain on paper towels and serve immediately, or keep in a 250 oven on a baking sheet.

POTATO LATKES (JEWISH POTATO PANCAKES) - GLUTEN-FREE

Potato Latkes (Jewish Potato Pancakes) - Gluten-Free image

A delicious gluten-free adaptation of a traditional family Chanukah recipe. Serve with sour cream and applesauce. TO MAKE GLUTEN-FREE: The gluten-free rice flour mix I use is 3 cups white rice flour, 3 cups brown rice flour, 2 cups potato starch (not flour), 1 cup tapioca starch - Use just one cup of this mixture. TO MAKE WITH REGULAR (WHEAT) FLOUR: Use only 1/2 cup of unbleached all-purpose white (wheat) flour.

Time 30m

Yield 6-8 serving(s)

Number Of Ingredients 7

4 lbs russet potatoes
1 large onion, peeled
2 teaspoons salt
1 tablespoon white pepper
1 cup gluten-free rice flour mix
3 eggs, beaten
olive oil (for frying)

Steps:

  • Preheat oven to 200 degrees or "warm" setting.
  • Peel potatoes and submerge in cold water. Grate the onion into a large bowl. Grate the potatoes using the larger grate of a box grater, or use the grater attachment of a food processor.
  • Quickly squeeze a handful of grated potatoes at a time over a second bowl (or the kitchen sink) to remove all liquid. Add the dry potatoes to the onions and mix as you go. This step should be done as quickly as possible to prevent oxidation of the potatoes.
  • Heat 1/4 inch of olive oil in a large, heavy skillet (cast iron works best) over medium-high heat, until just below the smoking point.
  • Add remaining ingredients to the batter, and stir until fully combined. Place a small handful of batter (approximately 1/4 cup) in the hot oil at a time, gently pressing each latke with the back of the spatula so that it is no more than 1/3" thick. Do not press too hard, as the latkes will be more crispy if the the batter is not densely packed and each latke is thin and lacy (space in between the pieces of potato). Fry until completely golden-brown on the bottom and crispy around the outside corners. Flip and brown on the second side.
  • Transfer latkes to a plate lined with paper towels or several layers of brown paper (I use grocery bags). Allow paper to absorb excess oil, then transfer latkes to a cooling rack placed over a baking sheet in the preheated oven, where they will stay warm until ready to serve. Serve hot, with sour cream and applesauce.
  • Extra latkes can be frozen on a baking sheet in the refrigerator, with parchment paper or freezer paper between the layers. When frozen, transfer to ziploc bags. Reheat in oven on 400 degrees F.

POTATO LATKES (POTATO PANCAKES)

Potato Latkes (Potato Pancakes) image

Latkas are a tradition for Channukah, but they are great anytime. This recipe makes about 15 latkas, but can easily be doubled or tripled. Easy to make, just allow time to stand at the stove with multiple frying pans. I use every burner that is open to speed it up. Traditionally served with applesauce on the side. Some people also top the pancakes with a little sour cream.

Time 55m

Yield 15 latkes, 5 serving(s)

Number Of Ingredients 6

2 large russet potatoes
1/2 onion
2 eggs
1/4 cup flour
1 teaspoon salt
canola oil or vegetable oil

Steps:

  • Wash and cut the potatoes small enough to fit through the top of the food processor for shredding. DO NOT PEEL.
  • Add potato & onion to the food processor using the shredding blade, alternating between the two (the onion keeps the potatoes from browning).
  • Mix beaten eggs, flour and salt in a large mixing bowl. Add potatoes and onions and stir well.
  • Heat 2 tbsp oil over medium-high in skillet (use multiple skillets to speed up the time to cook).
  • Using a slotted spoon, scoop about 1/3-1/2 cup of potato mixture into spoon, allowing excess liquid to drain back into the bowl.
  • Drop potato mixture into hot oil in frying pan.
  • Flip over when bottom is browned, then smash down to flatten into a pancake.
  • Fry on 2nd side until brown.
  • Drain on paper towels and then transfer to a cookie sheet in a single layer.
  • Repeat until all of the latkas are done.
  • At this point, the latkas can be served immediately, frozen or refrigerated to be served within 24 hours.
  • NOTE: Reheat refrigerated latkas at 350 degrees for 20-30 minutes and frozen ones at 450 degrees for 7-10 minutes.

CELERY ROOT AND POTATO PANCAKES / LATKES - GLUTEN-FREE

Celery Root and Potato Pancakes / Latkes - Gluten-Free image

This recipe combines the distinctive taste and wonderful crunch of celery root with the usual starchy Russet potatoes. I loved the flavor and the texture, they taste wonderful when topped with applesauce. This recipe is gluten-free if you use a gluten-free flour mix instead of matzo meal. These freeze well, so make extra!

Provided by Whats Cooking

Categories     Breakfast

Time 35m

Yield 8 serving(s)

Number Of Ingredients 9

4 large russet potatoes
1 large celery root (approximately 3/4 lb)
1 1/2 large onions
2 garlic cloves
2 teaspoons salt
1 tablespoon ground black pepper
3 eggs, beaten
1 cup gluten-free flour (rice flour based mix) or 3/4 cup matzo meal
olive oil (for frying)

Steps:

  • Preheat oven to 200 degrees or "warm" setting. Peel potatoes and submerge in cold water. Peel celery root with a paring knife. Pulse the onion and garlic in food processor. Mixture should be coarse, not completely pureed. Pour onion-garlic mixture into a large bowl.
  • Grate the celery root using the larger grate of a box grater, or use the grater attachment of a food processor. Add to onion-garlic mixture and stir.
  • Grate potatoes. Quickly squeeze a handful of grated potatoes at a time over a second bowl (or the kitchen sink) to remove all liquid. Add the dry potatoes to the onions and celery root, mixing as you go.
Place a small handful of batter (approximately 1/4 cup) in the hot oil at a time. Pat each handful into a 1/2" thick pancake shape before placing in oil - This will help each latke stay together. Fry until completely golden-brown on the bottom and crispy around the outside corners. Flip and brown on the second side.
  • Transfer latkes to a plate lined with paper towels or several layers of brown paper (I use grocery bags). Allow paper to absorb excess oil, then transfer latkes to a cooking rack placed over baking sheet in the preheated oven, where they will stay warm until ready to serve. Serve hot, with sour cream and applesauce.

KITTENCAL'S CRISPY POTATO AND GREEN ONION PANCAKES (LATKES)

Kittencal's Crispy Potato and Green Onion Pancakes (Latkes) image

This recipe goes back 30 years or more, my family *loves* these! you can make these ahead of time and then freeze, just cool and place on a large baking sheet to freeze, when frozen stack in a freezer container or pop them into a freezer bag, to reheat and re-crisp, defrost the pancakes then place in a 400 degree oven for about 8 minutes turn over then continue baking until crisp, I strongly suggest to double the recipe these will be half gone before they even make it to the table! I like to add in some cayenne pepper and a bit of garlic powder but that is optional --- yield is only estimated you should get between 20-23 pancakes for this recipe, to make things easier use your processor to grate the potatoes, plan ahead the grated potatoes need to soak for a minimum of 8-24 hours or even up to 2 days to remove some of the starch, the longer soaking time the crispier they will be --- serve with sour cream :)

POTATO PANCAKES/ LATKES A LA COHEN!

Potato Pancakes/ Latkes a La Cohen! image

Mr Cohen was the Master of Latkes in Milwaukee Wisconsin. He shared the recipe and it appeared in the "Milwaukee Journal" in 1973. I have never used another recipe again!!!

Provided by Koechin Chef

Categories     Breakfast

Time 25m

Yield 30 pieces, 6-8 serving(s)

Number Of Ingredients 10

4 medium idaho potatoes
1 bermuda onion
3 eggs
1 garlic clove
1/2 cup dry breadcrumbs
1/2 teaspoon baking powder
1 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon fresh ground pepper
1/2 cup vegetable oil

Steps:

  • The secret to these crisp delights, is to use bread crumbs instead of flour as other recipes suggest!
  • Cut the washed, unpeeled potatoes into chunks.
  • Peel the onion (medium)and cut into chunks as well.
  • Mince the garlic.
  • Put this in batches through the shredding disk of a food processor(not too fine). If you do not have a processor, use a blender but place one egg into the bottom first with each batch and pulse several times.
  • Empty contents into a large bowl and drain off some of the liquid.
  • Now stir in all the remaining ingredients except the oil. The batter should be thick enough to hold its shape. You may need to add extra bread crumbs.
  • Pour enough oil into a large skillet to about 1/8 inch deep.
  • Heat over medium high heat, about 350 degrees Fahrenheit.
  • Drop in the batter by heaping tablespoons (I like them larger).
  • Flatten them out a bit and cook until nice and brown on the underside, then flip and repeat. You may need to add more oil as you proceed. They should be crisp on the outside and soft but cooked on the inside. I always cook one and taste it. :-) Check if you want to add a little more salt.
  • Have your oven heated to 200 degrees Fahrenheit; line several loaf pans with double paper towels.
  • Stand the cooked pancakes in them on end and keep warm in the oven.
  • You should get 20 to 30 depending on size. I allow at least 4 per person. :-) Enjoy!

POTATO LATKES (PANCAKES)

Potato Latkes (Pancakes) image

These are sauteed pancakes, and delicious. This is the way my grandmother made them, and they were served at the Jewish holidays of Hanukah and during the 8 days of Passover, but not at the Seder (dinner and religious service), but for a light supper. They are good served as a side dish with the Winter Vegetable Plate in my cookbook. If you don't have Matzo Meal (which is also great for breading meat or fish),substitute all purpose flour.

Provided by Chef Elaine C.

Number Of Ingredients 8

2 lbs potatoes
2 extra large eggs
1 teaspoon salt

1 small onion
1/4 cup vegetable oil (safflower, peanut, or canola)

Steps:

  • Peel potatoes, apple, and onion.
  • Put them through a meat grinder, if you have one. Alternatively, grate them in food prcessor or blender.
  • Pour off some of the excess water from grated potatoes.
  • Beat eggs lightly in medium bowl and add grated potato mixture, salt, and matzo meal or flour.
  • Pour about 1" of oil in large skillet and heat until a few drops of water sizzle when they hit the oil.
  • Drop the mixture by tablespoons into the hot oil.

  • Immediately remove to double or triple layer of paper towels to drain. Serve hot, with apple sauce and sour cream'.

PENNY'S LATKES (POTATO PANCAKES)

Penny's Latkes (Potato Pancakes) image

Penny's easy potato latke recipe is fantastic! The latkes fry to a perfect golden brown. They're crisp on the outside with a warm and soft center. Onions add a mild flavor that pairs well with the potatoes. We tried ours with sour cream and applesauce and enjoyed the sweet and savory flavor of both.

Provided by Penny Burdge

Categories     Potatoes

Number Of Ingredients 8

2 medium russet potatoes
2 medium red potatoes
2 tsp cider vinegar
1 medium onion
2 large eggs
1/2 tsp Kosher salt
1/8 tsp freshly ground black pepper
3 Tbsp matzo meal or all-purpose flour

Steps:

  • 1. Peel the potatoes and place them in a bowl full of ice water and 1 teaspoon cider vinegar.
  • 2. Mince the onion. Put it into a fine sieve and using the back of a spoon or rubber spatula, press out as much onion juice as possible.
  • 3. Grate the potatoes (I use a box grater) and return them to the ice water. Stir them up let sit 5 minutes. Pour off into a colander, let drain, and then place onto white towels. Roll up tightly and twist the towels to extract as much water as possible.
  • 4. Beat the eggs well. Stir together the matzo meal or flour, salt and pepper in a large bowl. Add the grated potatoes and onion; mix well. Add the eggs and mix until all the potatoes are covered with egg.
  • 5. Heat a large heavy skillet on medium heat for about 3 minutes, add about a quarter-inch of canola oil and continue heating until the oil is about 375 degrees. You can tell when the oil is hot enough by dropping a piece of potato into it. If it sizzles vigorously, it's ready.
  • 6. Using a 2 tablespoon measure, drop a mound of potatoes into the hot oil and use the back of the measure to flatten to an even thickness. Fry until golden and the side up has lost its shiny, wet look. Turn and finish frying until done.
  • 7. Remove from pan and drain on paper towel for a minute - serve as soon as possible.
  • 8. Serve with applesauce and sour cream. Homemade applesauce is the best and it's easy to make. See my recipe.

LACY POTATO PANCAKES (LATKES)

Lacy Potato Pancakes (Latkes) image

Provided by Cheryl VanOcker

Categories     Pancakes

Number Of Ingredients 8

4 potatoes, peeled
1 small onion
2 eggs
1/3 c flour
1 tsp baking powder
1 tsp salt
pinch lemon pepper or pepper
oil

Steps:

  • 1. Grate potatoes either using the largest holes on a four-sided hand grater, or the grater attachment on a food processor.
  • 2. Place potatoes in a colander and rinse under cold water to remove the starch and be sure to allow potatoes to drain well.
  • 3. Grate onion, removing any excess moisture by placing in colander and pressing with the back of a wooden spoon.
  • 4. Combine potato and onion.
  • 5. Beat eggs into mixture; stir in flour, baking powder, salt and pepper.
  • 6. If using a food processor, combine ingredients using plastic knife attachment so potatoes remain in grated pieces.
  • 7. Heat 1/8\\\" of oil in a large skillet.
  • 8. For each pancake, drop about 2 tablespoons of batter into the oil and flatten with the back of a wooden spoon; the flatter the pancake, the crisper it will be.
  • 9. Brown well on both sides.
  • 10. Drain well on paper towels.
  • 11. Keep the cooked pancakes warm in a 100 degree oven.
  • 12. Serve with pink cinnamon applesauce (see recipe) and/or sour cream.
  • 13. Makes about 2 dozen regular size or 5 dozen miniatures.
  • 14. Pancakes may be made ahead of time and refrigerated between layers of waxed paper when cooled.
  • 15. To reheat, place in a single layer on an ungreased cookie sheet.
  • 16. Bake uncovered at 450 for 5 minutes, or until crisp and hot.

Tips:

  • Choose the Right Potatoes: Use starchy potatoes like Russet, Idaho, or Yukon Gold for crispy latkes. Avoid waxy varieties like red or fingerling potatoes as they hold more moisture and won't brown well.
  • Grate Potatoes Finely: Use the small holes of a box grater or a food processor fitted with a grating disc to achieve a fine, even texture. This helps the latkes cook evenly and become crispy.
  • Squeeze Out Excess Moisture: After grating, place the potatoes in a colander lined with cheesecloth or a clean kitchen towel and squeeze out as much liquid as possible. Removing excess moisture prevents the latkes from becoming soggy.
  • Season Generously: Don't be shy with the seasonings! Add plenty of salt, pepper, and other spices like garlic powder, onion powder, or paprika for flavorful latkes.
  • Heat the Oil Properly: Use a heavy-bottomed skillet or griddle and heat the oil over medium-high heat before adding the latkes. This helps them sear and crisp up quickly.
  • Don't Crowd the Pan: Cook the latkes in batches to avoid overcrowding the pan. This ensures they have enough room to spread out and cook evenly.
  • Flip Carefully: Once the edges of the latkes are golden brown, carefully flip them using a spatula. Be gentle to prevent them from breaking apart.
  • Drain on Paper Towels: After cooking, transfer the latkes to a plate lined with paper towels to absorb any excess oil.

Conclusion:

Crispy, golden-brown potato latkes are a delicious and versatile dish that can be enjoyed as a side or main course. With the right ingredients and techniques, you can easily make perfect latkes at home. Experiment with different seasonings and toppings to create unique and flavorful variations. Whether you like them classic or loaded with your favorite toppings, potato latkes are sure to be a hit with everyone at the table. So, gather your ingredients, heat up your skillet, and get ready to indulge in this delightful treat!
