SLOW COOKER GREEN BEANS, HAM AND POTATOES
I make this dish often; I have never really measured the ingredients, but can give you a reasonable approximation. Note: Freeze leftover cooking liquid, and then add to bean soup, ham or cabbage dishes, or use to cook dumplings in. It's delicious!

CHEESY LEFTOVER HAM AND MASHED POTATO CASSEROLE
This is something I did one night when I had a bunch of leftovers that turned into one of my favorite comfort foods. You could switch out just about anything for anything of a similar type, chicken for the ham, different soups, etc. Make it as is or use your imagination.

GREEN BEAN POTATO BAKE
As a pastor's wife, I often cook up contributions to church dinners using on-hand ingredients. This creamy bake was such a hit, I now take it to family get-togethers as well. I make it up ahead, refrigerate it and bake it shortly before serving.

Steps:
- Preheat the oven to 350 degrees F.
- Cook the green beans in heavily salted boiling water until just tender crisp, 2 to 3 minutes. Use a slotted spoon to transfer the beans to a salted ice bath. Once cooled, drain well and transfer to a large bowl.
- Toss the shiitakes with the olive oil, sprinkle with salt and pepper and spread on a baking sheet. Roast until golden brown, 8 to 10 minutes. Transfer to the bowl with the green beans.
- In a large 12-inch cast-iron skillet, melt the butter over medium heat. Add the onion and saute until soft, 6 to 8 minutes. Add the flour and cook until golden brown, 2 minutes more. Pour in the mushroom broth, and bring up to a simmer. Cook until the sauce thickens, 6 to 8 minutes. Stir in the cream cheese, heavy cream, thyme, salt and pepper. When the cream cheese is melted and the sauce is smooth, remove from the heat and pour into the bowl with the green beans and shiitakes. Set aside.
- Spread the Goat Cheese Smashed Potatoes in the cast-iron skillet. Pour the green bean mixture over the mashed potatoes and top with the fried onions. Bake until all the ingredients are hot and bubbly, 20 minutes.
- Place the potatoes and yams in a large saucepan, cover with cold water and season with salt. Bring to a boil and cook until fork-tender, 15 to 20 minutes.
- Drain the potatoes and yams and place in a stand mixer fitter with a whisk attachment. Add the goat cheese, butter and garlic and mix on low just until smooth, being careful not to over-mix or the potatoes will become gummy. Season with salt and pepper. If necessary, add the milk to loosen.
CRAZY-SIMPLE COTTAGE HAM, POTATOES, AND GREEN BEANS
Cottage ham is one of my favorite dishes to eat because it's rich in flavor and incredibly simple to make. Requiring only five ingredients and five minutes of prep time, this dish could quickly become a go-to meal in your household. If you can't wait the hour it takes to cook, drop it in a slow cooker in the morning, and it'll be ready when you get home.

HAM AND CHEESE GREEN BEAN CASSEROLE
With all due respect to the old-school classic, this Ham and Cheese Green Bean Casserole, tested to perfection in the Betty Crocker Kitchens, is ready to take the crown as the best holiday side dish you'll ever make. Here's why: the velvety cheese sauce is made with half-and-half, cream cheese, cheddar and broth, so it's not just rich, it has serious depth of flavor. The one thing we haven't changed, and would never change-those delectable French-fried onions-adding an irresistible crispy crunch on top! If you've ever dreamed of eating green bean casserole for dinner-and honestly, if you haven't, we've got other recipes for you-make it happen with this upgraded classic that's way too good to save only for the holiday season!

Steps:
- Dice the ham, green beans, onion and potatoes. Add ingredients into your Crock Pot with 3 cups of water and season with salt & pepper (according to taste). You can also use Steak Spice in yours. Cook for 6 hours on Low. Tip: To get a crispier dish, we'd suggest sautéeing everything in a saute pan once it's done cooking in the crockpot.
Tips:
- For a creamier sauce, use half-and-half instead of milk.
- If you don't have frozen green beans, you can use fresh green beans. Just trim and blanch them before adding them to the casserole.
- To make the casserole ahead of time, assemble it and then bake it for 30 minutes. Let it cool completely and then refrigerate it for up to 3 days. When you're ready to serve, reheat it in a preheated 350°F oven for 30-35 minutes, or until heated through.
- This casserole is also delicious made with leftover ham. Just shred or cube the ham and add it to the casserole along with the other ingredients.
- To add a little extra flavor, you can stir in some chopped fresh herbs, such as parsley, chives, or thyme, before baking.
Conclusion:
Potato-ham-green bean casserole is a classic comfort food dish that is perfect for a weeknight meal or a holiday gathering. It is easy to make and can be tailored to your own taste preferences. With its creamy sauce, tender potatoes, ham, and green beans, this casserole is sure to be a hit with everyone at the table.
