Recipe VIDEO above (helpful for pre-post browned butter). A Lemon Butter Sauce with Crispy Pan Fried Fish that would be perfectly at home in a posh restaurant, yet is so quick to make at home! Browning the butter gives the sauce a rich, nutty aroma which pairs beautifully with fresh lemon, as well as thickening the sauce and giving it a gorgeous golden colour.

60 g / 4 tbsp unsalted butter (, cut into pieces)
1 tbsp fresh lemon juice
Salt and finely ground pepper
2 x thin white fish fillets (120-150g / 4-5oz each), skinless boneless (I used Bream, Note 1)
Salt and pepper
2 tbsp white flour
2 tbsp oil ((I use canola))
Lemon wedges
Finely chopped parsley, optional

Steps:

  • Place the butter in a light coloured saucepan or small skillet over medium heat.
  • Melt butter then leave on the stove, whisking / stirring very now and then. When the butter turns golden brown and it smells nutty - about 3 minutes, remove from stove immediately and pour into small bowl. (Note 2)
  • Add lemon juice and a pinch of salt and pepper. Stir then taste when it has cooled slightly. Adjust lemon/salt to taste.
  • Set aside - it will stay pourable for 20 - 30 minutes. See Note 3 for storing.
  • Pat fish dry using paper towels. Sprinkle with salt & pepper, then flour. Use fingers to spread flour. Turn and repeat. Shake excess flour off well, slapping between hands if necessary.
  • Heat oil in a non stick skillet over high heat. When the oil is shimmering and there are faint wisps of smoke, add fish. Cook for 1 1/2 minutes until golden and crispy on the edges, then turn and cook the other side for 1 1/2 minutes (cook longer if you have thicker fillets).
  • Remove immediately onto serving plates. Drizzle each with about 1 tbsp of Sauce (avoid dark specks settled at the bottom of the bowl), garnish with parsley and serve with lemon on the side. Pictured in post with Kale and Quinoa Salad.

The cooking time is so short that the smell - which, if your fish is fresh and not funky, should not be overpowering - will dissipate quickly. And in the meantime, you have an easy dinner of tender fish with a toothsome crust, anointed with nutty, lemony brown butter and perfumed with herbs. You can use virtually any fish fillet, skin on or off, as long as it is not too thick. If the butter is browning too fast, reduce the heat and add a nut of cold butter to prevent scorching, or squeeze in the juice of half a lemon.

1 1/2 cups flour
1 pinch salt
1 teaspoon ground pepper
4 eggs
2 tablespoons Dijon mustard
2 cups dried mashed potato flakes
3 tablespoons olive oil or 3 tablespoons vegetable oil
4 (4 -6 ounce) white fish steaks
1/2 cup dry white wine
3 tablespoons lemon juice
2 teaspoons minced garlic
2 tablespoons chopped green onions
10 tablespoons unsalted butter

Steps:

  • Preheat oven to 375 degrees.
  • Place the flour in a shallow bowl and season with salt and pepper. In another shallow bowl, beat the eggs with the mustard. In a third shallow bowl, place the dried mashed potato flakes.
  • In a large sauce pan, heat oil over high heat.
  • Dip the steaks in the the flour, then the egg mixture, then the potato. Place the fish in the sauce pan and sear for 2 minutes per side. Place the saucepan with fish in the oven for 4 minutes or until cooked throughly.
  • While fish is baking. Place anouther saucepan over high heat. Add the wine, lemon juice, garlic and green onions. Cook for 5-6 minutes until the liquid is reduced by 2/3.
  • Over low heat whisk in butter, a small amount at a time.
  • Serve sauce over fish and Enjoy!

1/4 teaspoon paprika
1/4 teaspoon garlic salt
1/4 teaspoon pepper
1 lb catfish (3 filets) or 1 lb tilapia fillet, washed and dried (3 filets)
1 small egg, lightly beaten
1 large red potatoes, sliced into 1/8 inch rounds so you can almost see th them
2 -3 teaspoons butter, plus
2 -3 teaspoons olive oil, to cover bottom of pan
1/2 lemon, juice of
1/2 lemon, sliced (to garnish)

Steps:

  • Mix basil, paprika, garlic salt, pepper and rub into filets.
  • Brush fish with egg then place 6 slices of potato to cover fish.
  • Heat oil and butter in pan.
  • Gentle place potato side down in hot pan and do not move.
  • Place on top side six more slices of potato.
  • Cook till you see the edges are browning and the filtes move easily about 4-5 minutes.
  • Ever so carefully flip fish away from you.
  • Trying to keep the potatoes in place.
  • Fry for 4 more minutes.
  • Drain on paper towel.
  • Serve hot seasoned with salt,lemon juice and garnish with lemon slices.

  • Pan fry the one side then place the oven proof pan under the broiler to finish cooking and browning the top side.

4 cloves garlic, minced

1/4 teaspoon salt
1 tablespoon olive oil
1 large lemon, thinly sliced,seeded,end pieces discarded

Steps:

  • Preheat oven to 450 F and place a heavy baking sheet in oven to preheat as well.
  • Cut 4 large rectangles of foil or parchment paper and place a fish fillet in the center of each piece.
  • Combine remaining ingredients except lemon slices in a small bowl and stir well.

1/4 cup all-purpose flour
Sea salt and freshly ground black pepper
2 eggs
1 Tbsp Dijon mustard
1 medium potato, grated
1.5 Tbsp canola oil
4 (4-oz.) codfish filets
Lemon Butter Sauce
1/4 cup dry white wine
1.5 Tbsp lemon juice
1 tsp garlic, minced
1/2 Tbsp shallots, minced
5 Tbsp butter/butter and oil mixture spread
Fresh or dried parsley

Steps:

  • Fish:
  • Preheat oven to 375 degrees F. Place the flour in a shallow bowl and season with salt and pepper. In another shallow bowl, beat the eggs with the mustard. In a third shallow bowl, place grated potato. In a large ovenproof saute pan, heat oil.
  • Dip the filets first in the flour, then the egg mixture, and finally in the potato. Add the fish to the saute pan and cook for 2 minutes per side. Then place the fish into the oven for 4 minutes, until the fish is cooked through and golden.
  • Lemon Butter Sauce:
  • Set a large non-reactive saucepan over high heat. Add the wine, lemon juice, garlic, and shallots. Cook for 5 to 6 minutes or until liquid is reduced by 2/3. Over low heat, whisk in 3 tablespoons of the butter a few pats at a time. Remove from heat and whisk in the remaining 2 tablespoons of the butter 1 tablespoon at a time. Continue whisking until all of the butter is incorporated into the sauce. Strain the sauce, pressing all of the liquid into a bowl. Stir in the parsley. Serve immediately, or keep warm for a few minutes until ready to use.
