Use snapper, cod, orange roughy, or any other white fish in this recipe. Thin, flat fillets work best. The potato crust is first browned over medium-high heat in a skillet, then the fish finishes cooking in a moderate oven to ensure that it stays moist.

1 tbsp. Prepared Horseradish
1/2 tsp. salt (divided)
1/4 tsp black pepper
Red Snapper or other white fish filets
4 tsp. Olive Oil, divided
Lemon Wedges.

Steps:

  • Pre-Heat oven @ 375 degrees. Combine potato, horseradish, 1/4 tsp salt & pepper. Sprinkle both sides of filets with 1/4 tsp salt. Tips:

  • Be sure to select a red snapper that is fresh and of good quality. This will ensure that the fish has a mild, sweet flavor and firm texture.
  • To ensure the crispy crust, pat the fish dry before coating it in the potato mixture. This will help the coating adhere to the fish and prevent it from becoming soggy.
  • Feel free to experiment with different seasonings and herbs in the potato mixture to create a unique flavor profile. Some popular additions include paprika, garlic powder, onion powder, and dried thyme.
  • If you don't have a baking sheet, you can also cook the fish in a large skillet over medium heat. Just be sure to adjust the cooking time accordingly.
  • Serve the potato-crusted red snapper with your favorite sides, such as roasted vegetables, mashed potatoes, or a simple green salad.
