VELVEETA POTATO SOUP

Velveeta Potato Soup image

I know what you're thinking....another potato soup...that's what I thought too until I tasted it. This is good served with "Jiffy" cornbread muffins, especially on cool autumn nights or cold winter nights. Positively a comfort food. This recipe is from a lady that I worked with at school.

Time 55m

Number Of Ingredients 12

3 -5 potatoes (cubed)

8 ounces Velveeta cheese (cubed)

Steps:

  • Put potatoes, carrots, onion and seasonings in a large pot.

Tips:

  • For a smoother soup, blend the soup in a blender or use an immersion blender until it reaches your desired consistency.
  • If you don't have any Velveeta cheese on hand, you can substitute it with 2 cups of shredded cheddar cheese and 1/2 cup of cream cheese.
  • To make the soup even more flavorful, add in some cooked bacon, chopped ham, or diced vegetables such as carrots, celery, or onions.
  • If you want a thicker soup, add more flour or cornstarch to the mixture. You can also add a roux, which is a mixture of equal parts butter and flour that is cooked together until it forms a paste.
  • To make the soup ahead of time, simply prepare the soup according to the recipe and then let it cool completely. Store the soup in an airtight container in the refrigerator for up to 3 days or in the freezer for up to 3 months. When you're ready to serve, thaw the soup overnight in the refrigerator or reheat it over low heat on the stovetop.

Conclusion:

This potato cheese soup with Velveeta is a quick and easy recipe that is perfect for busy weeknights. It's also a great way to use up leftover potatoes. The soup is creamy, cheesy, and flavorful, and it's sure to be a hit with the whole family. So next time you're looking for a comforting and delicious soup, give this recipe a try. You won't be disappointed!
