Yield Serves 4

Number Of Ingredients 8

1 1/2 pounds russet potatoes, peeled, cut into 1-inch pieces
4 cups canned chicken broth
1 cup (about) milk
1 tablespoon butter
1 tablespoon chopped fresh chives
1/3 cup sour cream
Salt and pepper
Additional sour cream

Steps:

  • Combine potatoes and broth in heavy 2-quart saucepan. Cover and simmer until potatoes are very tender, stirring occasionally, about 45 minutes. Let mixture cool slightly.
  • Purée potato mixture in batches in blender or processor. Return soup to saucepan. Stir in enough milk to thin to desired consistency. Mix in butter and chives. Bring to simmer. Remove from heat and mix in 1/3 cup sour cream. Season with salt and pepper. Serve, passing additional sour cream separately.

Tips:

  • For a creamier soup, use a high-quality cheddar cheese. A sharp cheddar will give the soup a more intense flavor, while a mild cheddar will result in a milder soup.
  • If you don't have any chives on hand, you can substitute green onions or leeks.
  • To make the soup ahead of time, simply cook the soup according to the recipe and then let it cool completely. Store the soup in an airtight container in the refrigerator for up to 3 days, or in the freezer for up to 3 months.
  • When you're ready to serve, reheat the soup over medium heat until it is warmed through.

Conclusion:

Potato cheddar and chive soup is a hearty, comforting, and flavorful soup that is perfect for a cold winter day. It is easy to make and can be tailored to your own taste preferences. So next time you're looking for a delicious and satisfying soup, give this recipe a try. You won't be disappointed!
