Time 1h10m

Yield 8-10 serving(s)

Number Of Ingredients 11

4 cups frozen hash browns
7 5/8 ounces instant mashed potatoes with butter and herbs
1/2 cup butter, softened
4 ounces cream cheese, softened
1 cup monterey jack cheese, shredded
1/2 cup sour cream
1/2 teaspoon garlic salt
1/2 teaspoon salt
1/2 teaspoon pepper
2 cups boiling water
2 cups French fried onion rings

Steps:

  • Preheat oven to 350 degrees F.
  • Bring a pot of water to the boil and add the hash browns. Cook for 5 minutes and drain. In a large bowl, mix together the cooked hash browns, mashed potato mix, butter, cream cheese, jack cheese, sour cream, garlic salt, salt and pepper. Stir in the boiling water. Place in a greased 2-quart casserole dish. Bake for 35 to 45 minutes. Sprinkle the onion rings over the casserole and bake for about 5 to 8 minutes longer until onions are golden brown.

Tips:

  • Choose starchy potatoes like russet or Yukon Gold for a creamy casserole.
  • Soak the sliced potatoes in cold water for 30 minutes to remove excess starch, resulting in a less gummy casserole.
  • Use a combination of cheeses for a more flavorful dish. Paula Deen's recipe suggests a blend of cheddar, Parmesan, and cream cheese.
  • For a crispy topping, use panko breadcrumbs or crushed crackers. You can also add some grated Parmesan or melted butter for extra flavor.
  • If you don't have evaporated milk, you can use regular milk or even water. However, the casserole may be less creamy.
  • If you're making the casserole ahead of time, assemble it and refrigerate it overnight. Then, bake it just before serving.

Conclusion:

Paula Deen's potato casserole is a classic Southern comfort food that is perfect for any occasion. With its creamy potato filling, cheesy topping, and crispy crust, it's sure to be a hit with everyone at the table. Whether you're making it for a weeknight meal or a special occasion, this casserole is sure to please.
