POTATO AND RED ONIONS SLOW COOKED

Make and share this Potato and Red Onions slow cooked recipe from Food.com.

Provided by Rita1652

Categories     Pork

Time 7h15m

Yield 6-8 serving(s)

Number Of Ingredients 7

5 potatoes, sliced
1 large red onion, sliced thinly
6 slices bacon, cooked & crumbled
4 ounces freshly grated parmesan-romano cheese mix
1 can cream of mushroom soup
fresh thyme
salt and pepper, to taste

Steps:

  • Layer all ingredients in lightly greased 3 1/2-quart crock pot; cover and cook on low for 7 to 9 hours.
  • Adjust seasonings as needed.

Tips:

  • Choose the Right Potatoes: For this recipe, it's best to select waxy or semi-waxy potatoes, as they hold their shape well during slow cooking. Avoid using starchy potatoes, as they may break down and become mushy.
  • Cut Potatoes Evenly: Ensure the potatoes are cut into uniform-sized pieces so they cook evenly. This will help them cook through at the same time.
  • Enhance Flavors with Aromatics: Don't just throw the potatoes and onions in the slow cooker – add some aromatics to elevate the flavors. Garlic, thyme, bay leaves, and rosemary are great options.
  • Use Good Quality Stock: The stock you use will significantly impact the final taste of the dish. Opt for a flavorful vegetable or chicken stock instead of water.
  • Don't Overcrowd the Slow Cooker: Make sure there's enough space for the potatoes and onions to cook evenly. Overcrowding the slow cooker can result in uneven cooking.
  • Season to Taste: Always taste the dish before serving and adjust the seasonings as needed. A sprinkle of salt, pepper, and a squeeze of lemon juice can make a big difference.

Conclusion:

This slow-cooker recipe for potatoes and red onions is a simple yet satisfying dish that's perfect for busy weeknights or lazy weekends.
