1 1/2 pounds new red potatoes, washed and cut into 1-inch chunks
1 pound green beans, trimmed and cut into 1-inch pieces
1/3 cup Basil Pesto, recipe follows
Salt and freshly ground black pepper
1/4 cup pine nuts
1 clove garlic, peeled
3 cups lightly packed fresh basil leaves
1/4 cup freshly grated Parmesan
1 tablespoon fresh lemon juice
Salt and freshly ground black pepper
1/4 cup olive oil

Tips:

  • Choose fresh, tender green beans: Look for beans that are bright green in color and snap easily when you bend them. Avoid beans that are wilted or have brown spots.
  • Blanch the green beans before adding them to the salad: This will help to preserve their bright green color and crisp texture.
  • Use a variety of potatoes in your salad: This will add flavor and texture to the dish. You can use red potatoes, Yukon Gold potatoes, or even sweet potatoes.
  • Cook the potatoes until they are tender but still hold their shape: You don't want them to be too mushy.
  • Use a flavorful dressing: The dressing is what really brings this salad together. Be sure to use a dressing that has a good balance of flavors, such as a vinaigrette or a creamy dressing.
  • Garnish the salad with fresh herbs: This will add a pop of color and flavor to the dish. Some good options include cilantro, parsley, or mint.

Potato and green bean salad is a delicious and refreshing side dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences.
