MAPLE SWEET POTATO AND APPLE GRATIN

Categories     Potato

Number Of Ingredients 5

2 pounds baked sweet potatoes, peeled and cut into slices
2 Golden Delicious apples, peeled, cored and cut into slices
1/3 cup maple syrup
3 tablespoons butter
1/2 teaspoon cinnamon

Steps:

  • directions Preheat oven to 400 degrees F. Butter a gratin or baking dish. Decoratively arrange potatoes and apples in gratin or baking dish. Combine maple syrup, butter, cinnamon and salt to taste in saucepan. Bring to a simmer, stirring. Pour over potatoes and apples. Bake 25 minutes. After baking, put under broiler about 4 inches from heat for 1-2 minutes, or until lightly browned.

Tips:

  • Choose the right potatoes: Use a firm, starchy potato like Yukon Gold or Russet for the best results. Avoid waxy potatoes like Red Bliss, as they will not hold their shape well in the gratin.
  • Slice the potatoes thinly: This will help them cook evenly and create a creamy texture in the gratin. Use a mandoline or a sharp knife to slice the potatoes about ⅛-inch thick.
  • Peel the apples or not: It's up to you whether you peel the apples or not. If you do peel them, be sure to remove the core as well. If you don't peel them, be sure to wash them thoroughly.
  • Use a good quality cheese: The cheese is one of the most important ingredients in the gratin, so be sure to use a good quality variety. A sharp cheddar, Gruyère, or Emmental cheese will all work well.
  • Don't overcook the gratin: The gratin is done when the potatoes are tender and the cheese is melted and bubbly. Overcooking will make the potatoes dry and the cheese tough.

Conclusion:

Potato and apple gratin is a delicious and versatile dish that can be served as a main course or a side dish. It's perfect for a special occasion or a weeknight meal. With its creamy texture, cheesy flavor, and sweet apples, this gratin is sure to please everyone at the table.
