1 cup dry bread crumbs
½ cup diced onion
½ apple - peeled, cored, and diced
2 teaspoons garlic powder
½ teaspoon salt
½ teaspoon ground black pepper
⅓ cup ketchup
2 tablespoons prepared yellow mustard
2 tablespoons brown sugar

Steps:

  • Combine beef, bread crumbs, onion, apple, garlic powder, salt, and pepper in a large bowl until evenly blended.
  • Shape the beef mixture into a loaf and place on a large piece of aluminum foil. Fold the foil up and around the edges of the meatloaf, creating a makeshift loaf pan.
  • Pour 1/2 cup water into a multi-functional pressure cooker (such as Instant Pot®) and place the steam rack inside with the handles up. Place the meatloaf on top of the rack. Close and lock the lid; seal the vent. Select high pressure according to manufacturer's instructions; set timer for 25 minutes. Allow 10 to 15 minutes for pressure to build.
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Release cooker pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Transfer meatloaf, still on the rack, to a baking sheet. Broil meatloaf in the oven until browned, about 5 minutes.

1 1/2 lbs ground beef (beef, pork and veal mix)
2 slices white bread, crusts removed
1 carrot, peeled and sliced
1/4 medium onion
1 garlic clove
1/4 cup fresh parsley
1/4 cup grated parmesan cheese
2 eggs, beaten
1 teaspoon salt
1 teaspoon black pepper
3 russet potatoes, peeled and chunked 1 inch thick
3 carrots, sliced 1 inch thick
1 small onion, sliced
olive oil
salt and pepper, to taste for vegetables
chopped fresh parsley

Steps:

  • In a food processor, place bread and process until fine crumbs form.
  • Transfer crumbs to a large bowl.
  • Add carrot, onion, garlic and parsley to the food processor and process until minced, about 30 seconds.
  • Add vegetables to bread crumbs in bowl.
  • Add meat, grated Parmesan, eggs and salt and pepper and mix well.
  • If mixture seems too dry, I add a few splashes of water and remix.
  • Shape into a loaf and place in a greased baking pan.
  • Combine potatoes, carrots and onions in a bowl and sprinkle with salt and pepper, then drizzle with olive oil and mix.
  • Place around meat loaf in pan, sprinkle with fresh chopped parsley, cover tightly with foil and bake at 375° for about 45 minutes.
  • Uncover and bake for 15 to 20 minutes longer until vegetables are done.

1 lb ground beef
1 egg
3/4 cup breadcrumbs
salt and pepper (to taste)
2 tablespoons onions
2 tablespoons green onions
2 tablespoons Worcestershire sauce
3 potatoes
3 onions
3 carrots

Steps:

  • Combine first eight ingredients.
  • Shape into loaf in the center of a 13x9-inch pan.
  • Place potatoes, onions and carrots in layers around meat. Be sure to season veggies well with your favorite seasonings.
  • Cover tightly with foil.
  • Bake at 375°F for 1 hour.
  • Uncover then bake 10 minutes more.
  • I like to brush meat and veggies with a teriyaki glaze before and during baking.
  • You are able to change the taste of this meal by the seasoning you use.

2 large eggs, lightly beaten
1/3 cup 2% milk
1/4 cup finely chopped onion

1-1/2 pounds lean ground beef (90% lean)
1 pound bulk pork sausage
1/4 cup barbecue sauce

Steps:

  • In a large bowl, combine the first 7 ingredients. Add beef and pork; mix lightly but thoroughly. On a 12x8 piece of foil, shape into a 8x5-in. loaf. Bring foil up around sides of loaf, but do not cover top of loaf. , Place trivet insert and 1 cup water in a 6-qt. electric pressure cooker. Place foil-wrapped loaf on trivet. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 45 minutes. , Let pressure release naturally for 10 minutes; quick-release any remaining pressure. A thermometer inserted in meat loaf should read at least 160°. Remove meat loaf from pressure cooker and top with barbecue sauce. Let stand 10 minutes before removing from foil and slicing.

1/2 cup catsup or 1/2 cup chili sauce
1 tablespoon parsley, Snipped
2 tablespoons brown sugar, Packed

Steps:

  • Heat the oven to 350 degrees F.
  • Mix all the ingredients except the catsup and brown sugar together.
  • Press the mixture firmly in an ungreased loaf pan 8 1/2 X 4 1/2 X 2 1/2-inches.
  • Loosen the edge with a spatula and unmold the loaf in an ungreased baking pan 13 X 9 X 2-inches.
  • Mix the catsup and sugar then spoon onto the loaf.
  • Bake uncovered for about 1 to 1 1/4 hours.
  • Remove the meat loaf to a plate and let stand for 10 minutes.
  • Then slice and serve on a heated platter.
  • NOTE: If you don't have a pan this size, just form the mixture into a loaf in the large baking pan.
