3 tablespoons avocado oil, divided, or as needed
8 ounces sliced cremini mushrooms
1 ½ cups roughly chopped carrots
1 ½ cups roughly chopped onions
1 cup roughly chopped celery
2 cloves garlic, minced
½ cup dry red wine
⅔ cup pearl barley, rinsed
1 tablespoon tomato paste
2 bay leaves
½ teaspoon ground thyme
½ teaspoon beef bouillon base
1 pinch red pepper flakes, or more to taste
6 cups no-salt-added beef broth

Steps:

  • Generously season beef with salt and pepper.
  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Heat 1 tablespoon avocado oil and tilt the pot to distribute the oil evenly. Once oil shimmers, add 1/2 the beef and cook until browned, about 5 minutes. Transfer browned beef to a bowl and repeat with remaining beef.
  • Heat another tablespoon oil in the Instant Pot®; when oil shimmers, add mushrooms. Cook mushrooms, stirring occasionally, until slightly brown, 4 to 5 minutes. Add mushrooms to the bowl with the beef. Add 1 tablespoon avocado oil to the pot and cook carrots, onions, and celery until onions begin to soften, about 5 minutes. Add garlic and cook until just fragrant, about 1 minute. Pour in wine to deglaze the pot, scraping up any browned bits, and cook until wine has almost evaporated, 3 to 5 minutes. Return browned beef and mushrooms to the pot. Stir in barley, tomato paste, bay leaves, thyme, bouillon base, red pepper flakes, and beef broth. Stir until well combined.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 30 minutes. Allow 10 to 15 minutes for pressure to build.

I came up with this when I couldn't decide between chicken cacciatore or something more Tex-Mex. I also wanted a "real" meal without having to work too hard at it. We really enjoyed this. Other cuts of chicken can be used, although I recommend staying away from boneless skinless breasts because I think they tend to dry out in a slow cooker. Since every one's crock pots heat differently and grains can be tricky to cook in a CP, you may have to fool a little bit with the timing on the rice and barley. You could also make that separately and just add it in at serving time. Cooked the way I did it, it almost had a risotto-like texture to it.

1 cup onion, chopped
1 garlic clove, chopped
1 (14 1/2 ounce) can diced tomatoes with mild green chilies, with juice

The order I used was: onions and bell peppers, squash and carrots, lentils, peas, and barley, diced tomatoes and broth, salt, pepper, sugar, and finally the extra water. Set the crock pot on low for eight hours or on high for four hours. The lentils, peas, and barley will absorb a lot of water, so you may need to add even more extra (unless you like a nice thick soup like I do-then you will be very pleased when you arrive home from class!). Top with a sprinkle of basil and some pepper and enjoy!

1 lb mushroom, thinly sliced
1 garlic clove, minced (or pressed)
1 medium onion, finely chopped
2 tablespoons sweet Hungarian paprika
1 (14 1/2 ounce) can tomatoes (pear-shaped)
1 (14 1/2 ounce) can beef broth
1/2 cup water
1/2 cup pearl barley, rinsed and drained
1 tablespoon red wine vinegar
1/2 cup parsley, finely chopped
salt and pepper

Steps:

  • Combine mushrooms, garlic, and onion in a 3-quart electric slow cooker.
  • Sprinkle paprika over mushroom mixture.
  • Cut up tomatoes and add them along with their liquid to the pot.
  • Add broth, water, barley, and vinegar to cooker.
  • Cover and cook at low setting until barley is very tender (6 to 7 hours).
  • Before serving, stir parsley into soup.

I like to actually rinse the ground beef after it's browned. It is extra lean, but I always think if you can lower the fat and it still tastes great, then why not? Enjoy!

1 1/2 lbs extra lean ground beef, browned and strained
4 carrots, sliced
3 celery ribs, sliced
1 medium onion, chopped
3 (10 ounce) cans consomme
1 (28 ounce) can tomatoes (diced or chopped)
1 (10 ounce) can tomato soup
2 cups water
1/2 cup pot barley or 1/2 cup pearl barley
1 bay leaf
1 teaspoon dried thyme
1 teaspoon dried parsley
black pepper, freshly ground to taste

Steps:

  • Place all ingredients in crock pot and stir.
  • Cook on low for 6-8 hours or high for 4-6 hours.
  • Remove the bay leaf and enjoy with a crusty roll.

6 ounces portabella mushrooms, chopped into 1/2 inch cubes
1 medium onion, minced
1 teaspoon margarine, tub-style
2 (14 ounce) cans nonfat beef broth
1/4 cup barley
1/4 cup dry sherry
1/4 teaspoon sage
1/8 teaspoon garlic powder
1/8 teaspoon white pepper
1 (12 ounce) can evaporated skim milk
fresh parsley (to garnish)

Steps:

  • Sauté mushrooms and onions over medium heat for 4-5 minutes.
  • Transfer to crock pot.
  • Stir in broth, barley, sherry, sage, garlic and white pepper.
  • Cover and cook on low until the barley is tender, 6 to 8 hours (or high 4 to 6 hours).
  • Stir in the milk and cook until hot 15 to 30 minutes.
  • Ladle into bowl, garnish with parsley and serve!

YUMMMMY is what I say. I found this recipe in a cookbook, liked it but wanted something better. So I adapted this recipe after playing with it. Here is what I came up with.

1 -1 1/2 lb beef stew meat (cubed 1 inch pieces)
1 tablespoon cooking oil
1 cup carrots, sliced diagonally or 1 cup use baby carrots
1 cup sliced celery
1 large onion, chunked
14 ounces tomatoes (chunked or cut up)
1 cup pearl barley
2 large potatoes, cut in 1 in cubes
16 ounces green beans (drain liquid from can)
1 cup red wine or 1 cup Burgundy wine
4 cups beef broth (or water and bouillon to make equivalent)
2 garlic cloves, crushed
2 teaspoons basil, crushed
1/2 tablespoon hot red pepper flakes (optional)
1 teaspoon pepper
1/3 cup parsley, garnish

Steps:

  • in skillet heat oil and toss in stew meat to sear.
  • drain oil and toss into crock pot.
  • add in all other ingredients except parsley.
  • stir.
  • cover and cook on low 9-10 hours, high 4-5 hours.
  • before serving add parsley, stir.
  • serve with salad, crusty bread, and a hard cheese.
  • NOTE! Crock pots cook differently, newer ones cook hotter. Please check at initial times for low and high.
  • ***Searing meat is optional, I have had to toss everything in before work without searing and it came out well.

Tips:
