Tips:

  • When selecting possum meat, choose animals that are young and healthy. Older possums can have a strong, gamey flavor.
  • Be sure to remove all of the possum's internal organs, including the intestines, stomach, and lungs. These organs can impart a bitter flavor to the meat.
  • Soak the possum meat in cold water for several hours or overnight to help remove any remaining blood or impurities.
  • When cooking possum, use a low and slow method to allow the meat to become tender. Braising, stewing, and slow-roasting are all good options.
  • Add plenty of vegetables and herbs to your possum pie to enhance the flavor. Onions, carrots, celery, garlic, and thyme are all good choices.
  • If you are using a pre-made pie crust, be sure to pre-bake it before adding the filling. This will help to prevent the crust from becoming soggy.
  • Serve possum pie with a side of mashed potatoes, rice, or vegetables.

Possum pie is a unique and flavorful dish that is sure to impress your friends and family. With its tender meat and savory gravy, this pie is a delicious way to enjoy this wild game. So next time you're looking for something different to cook, give possum pie a try!
