2 tablespoons olive oil
3 medium Yukon Gold potatoes, diced
1 large sweet onion, chopped
½ cup diced carrots
½ cup diced celery
3 cloves garlic, chopped
salt and ground black pepper to taste
¼ teaspoon red pepper flakes, or more to taste
1 bunch kale, stems removed and leaves chopped
2 bay leaves
5 cups chicken broth
½ pound linguica sausage, diced
½ pound chorizo sausage, diced
1 (14 ounce) can diced tomatoes
1 (14 ounce) can garbanzo beans, with liquid

Steps:

  • Heat oil in a soup pot over medium heat until it sizzles, about 1 minute. Add potatoes, onion, carrots, and celery. Cook and stir for 3 to 4 minutes. Add garlic, salt, pepper, and red pepper flakes. Stir for another 2 to 3 minutes.

8 cups chicken broth
1 tablespoon olive oil
1 medium onion, chopped
3 cloves garlic, minced, or more to taste
1 pound fresh kale, torn into bite-size pieces
1 small green bell pepper, cut into 1/2-inch pieces
2 (4 ounce) links linguica sausage, cut into 1/2-inch pieces
3 each russet potatoes, peeled and cubed, or more to taste
1 (15 ounce) can cannellini beans
1 (15 ounce) can diced tomatoes
2 teaspoons garlic powder
1 teaspoon paprika
1 pinch salt and ground black pepper to taste

Steps:

  • Turn a slow cooker to Low and add chicken broth.

12 oz portuguese linguica sausage, sliced 1/4-inch thick (or polish sausage)
1 medium onion, chopped
1 clove garlic, minced
5 cups low-fat chicken broth
12-oz can wheat beer (hefeweisen or a similar light beer)
1 lb baby potatoes, halved
8-12 ounce pkg shredded cabbage
1 cup sliced carrots, about 1/4 inch thick
1 tsp coriander seeds
1/2 tsp whole allspice
1/2 tsp peppercorns
2 Tbsp chopped parsley
whole-grain mustard, for serving

Steps:

  • 1. In a 5- to 6-quart pan over medium-high heat, stir sausage often until lightly browned, 6 to 8 minutes. Spoon out and discard all but 1 tablespoon fat from pan.
  • 2. Add onion and garlic to pan; stir often until limp, 3 minutes.
  • 3. Increase heat to high. Add broth, beer, potatoes, cabbage, carrots, coriander, allspice, and peppercorns (wrap and tie spices in cheesecloth if desired). Cover and bring to a boil; reduce heat and simmer until potatoes are tender to bite, 10 to 15 minutes. Discard spices if wrapped.

2 teaspoons fine sea salt (Split)
2 teaspoons fresh ground black pepper (Split)
2 tablespoons fresh minced garlic cloves
3 cups maui onions (Chopped)
2 cups celery (Chopped)
2 cups carrots (Chopped)
1 serrano pepper (Seeded, Chopped )
1 lb roma tomato (Seeded, Diced)
1/2 cup red table wine (*Bairrada Portuguese wine)
8 cups ham stock
4 cups yukon gold potatoes (Chopped)
1 lb dried fava beans (**Green, & shell removed)
2 tablespoons fresh sage (Chopped)
2 tablespoons fresh thyme (Chopped)
2 tablespoons fresh parsley (Chopped)
2 tablespoons fresh savory (Chopped)

Steps:

  • Heat 2-tablespoons oil in a Dutch oven. Add bay leaves, Gouveia Portuguese sausages, 1-teaspoon sea salt, 1-teaspoon black pepper and cook 4-6 minutes or until done. Add chopped garlic and sauté for a minute.
  • Add remaining oil, 2-cups onions, celery, carrots, Serrano pepper, Roma tomatoes, salt and black pepper. Saute vegetables 2-3 minutes.
  • Add *Portuguese Table wine and reduce by one half.
  • Add ham stock, Yukon gold potatoes and green fava beans to soup. Add fresh chopped herbs and stir soup.
  • Bring soup to a full boil and reduce to a simmer for 45 minutes or until beans are soft. Season with salt and pepper to taste.
  • Serve soup in warm bowls and place one sausage on top.
