Steps:
- 1. Put chicken in pan and cover with water (or chicken broth if you prefer), then add all remaining ingredients except the rice. Bring to boil, then simmer until chicken is tender. Remove chicken from cooking liquid and add rice( If it looks as though you have too much liquid, remove some and set aside--add to rice if needed later). When rice is cooked, return chicken to pan and toss with cooked rice. Most of the cooking liquid should be absorbed. Serve with tossed salad.

Steps:
- Saute onions, garlic, salt, pepper and brown sugar in oil, till softened and beginning to brown in color. Add Chicken pieces, cook till almost done. Add broth, water, tomatoes and rice; cook till almost all liquid is absorbed. Stir in crushed red pepper and cook 2 more minutes.
Tips:
- Use high-quality ingredients: The better the ingredients, the better the dish will taste. Look for fresh, free-range chicken, flavorful rice, and ripe vegetables.
- Marinate the chicken: Marinating the chicken in a flavorful mixture of herbs, spices, and olive oil will help it stay moist and flavorful during cooking.
- Cook the rice perfectly: The rice should be cooked until it is tender but still has a slight bite to it. If the rice is overcooked, it will become mushy and bland.
- Don't overcrowd the pan: When browning the chicken, don't overcrowd the pan. This will prevent the chicken from cooking evenly and will make it more likely to stick to the pan.
- Use a heavy-bottomed pot: A heavy-bottomed pot will help to distribute the heat evenly and prevent the rice from burning.
- Let the dish rest before serving: After cooking, let the dish rest for a few minutes before serving. This will allow the flavors to meld and the rice to absorb the juices from the chicken.
Conclusion:
Portuguese Chicken and Rice is a delicious and easy-to-make dish that is perfect for a weeknight meal.
