PORTABELLA MUSHROOMS WITH POLENTA AND BALSAMIC VINEGAR

Portabella Mushrooms With Polenta and Balsamic Vinegar image

My husband and I had an appetizer like this on our anniversary a couple of years ago at Table Rock Lake in the Ozarks. It was so yummy that I had to find a recipe to recreate it. I couldn't find the exact recipe so here is the modified version of a couple of recipes that I came up with.

Time 50m

Yield 4-6 serving(s)

Number Of Ingredients 12

2 teaspoons extra virgin olive oil
1 cup non-instant polenta or 1 cup cornmeal
4 cups boiling water
1 garlic clove, minced
1/4 cup chopped flat leaf parsley
1 teaspoon crumbled fresh thyme leaves or 1/4 teaspoon dried thyme
1 teaspoon finely chopped fresh rosemary or 1/4 teaspoon dried rosemary
salt & freshly ground black pepper, to taste
1/4 cup grated parmigiano-reggiano cheese
4 large portabella mushrooms, stems removed
nonstick cooking spray or oil
good quality balsamic vinegar

Steps:

  • Preheat oven to 350 degrees.
  • In deep, heavy pot, combine olive oil and polenta.
  • Cook over med-high heat, stirring, until polenta smells toasty, about 2 minutes.
  • Remove pot from heat.
  • Add boiling water carefully, as this will splatter if you add it too quickly.
  • Stir until the polenta is smooth.
  • Stir in garlic, parsley, thyme, rosemary, salt and pepper.
  • Bake polenta, uncovered 20 minutes.
  • Stir it well then bake for an additional 20 minutes, or until the polenta is creamy.
  • While polenta cooks, lightly spray the mushroom caps, sprinkle with salt and grill, underside (gills) down, on a very hot grill or in heavy cast iron pan, about 4 minutes per side or until tender.
  • Divide the polenta among 4 dinner-size plates.
  • Sprinkle each with a quarter of the cheese.
  • Top each serving of polenta with a sliced mushroom, fanning the pieces.
  • Drizzle balsamic vinegar over the mushroom and polenta.
  • Serve immediately.

Yield Serves 6

Number Of Ingredients 15

Polenta
2 cups water
1/2 teaspoon salt
1/2 cup yellow cornmeal
1/4 cup freshly grated Romano cheese
1 tablespoon butter
1/4 cup chopped fresh basil
Stacks
2 large Japanese eggplants, each cut into six 1/2-inch-thick rounds
Olive oil
4 large plum tomatoes, each cut into 1/2-inch-thick rounds
Balsamic vinegar
Dried oregano
1 7 3/4-ounce package small fresh mozzarella balls in water, drained
12 fresh basil leaves

Steps:

  • For polenta:
  • Bring 2 cups water and salt to boil in heavy small saucepan. Gradually whisk in cornmeal. Reduce heat to medium-low; simmer until polenta is very thick, whisking constantly, about 6 minutes. Remove from heat. Add cheese and butter; whisk until melted. Mix in basil. Season generously with pepper. Spread in 9x9x2-inch metal baking pan. Chill until cold, about 1 hour.(Can be made 1 day ahead. Cover, keep chilled.)
  • For stacks:
  • Preheat broiler. Place eggplant on baking sheet. Brush with oil on both sides; sprinkle with salt and pepper. Broil until brown, about 4 minutes per side. Arrange 12 tomato slices on large plate (discard end slices). Drizzle each slice with a few drops of vinegar. Sprinkle eggplant and tomatoes with oregano.
  • Preheat oven to 375°F. Oil baking sheet. Cut polenta into 25 squares. Place 12 squares on sheet. Top each with eggplant round. Cut cheese into 1/3-inch thick slices; place atop squares. Top each with tomato slice (save remaining polenta and cheese for another use).
  • Bake polenta stacks until heated through and cheese melts, about 15 minutes. Top each stack with 1 basil leaf.

Tips:

  • Use fresh, high-quality ingredients: The better the quality of your ingredients, the better your dish will taste. This is especially true for the portobello mushrooms, which should be firm and meaty.
  • Cook the portobello mushrooms properly: Portobello mushrooms can be cooked in a variety of ways, but the most popular method is to grill or pan-fry them. Be sure to cook them until they are tender and slightly caramelized.
  • Make sure the polenta is creamy and smooth: Polenta is a versatile dish that can be served as a side dish or main course. To make sure it is creamy and smooth, whisk it constantly while it is cooking.
  • Don't be afraid to experiment with different toppings: Portobello polenta stacks are a great way to showcase your culinary creativity. Try topping them with roasted vegetables, sautéed greens, or a fried egg.

Conclusion:

Portobello polenta stacks are a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. They are also relatively easy to make, making them a great option for busy weeknights. With a little creativity, you can create a variety of different flavor combinations that will please everyone at the table.
