Time 40m

Yield 4 serving(s)

Number Of Ingredients 8

3 tablespoons extra virgin olive oil, plus extra for oiling the grill pan
4 -6 portabella mushrooms
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 cup marinara sauce (store bought or homemade)
1/2 cup shredded mozzarella cheese
1/3 cup grated parmesan cheese
2 tablespoons butter, cut into small pieces

Steps:

  • Place a grill pan over medium-high heat or preheat a gas or charcoal grill.
  • Drizzle 3 tablespoons of olive oil over both sides of the mushrooms, rubbing it in good. Sprinkle the mushrooms with salt and pepper. Brush olive oil on the grill to prevent the mushrooms from sticking. Grill until the mushrooms are heated through and tender, about 5 minutes each side.
  • Preheat the oven to 400*F.
  • Spread 1/2 cup of the marinara sauce on the bottom of a 9"x13" baking dish. Place the grilled mushrooms on top of the marinara sauce and top with the remaining marinara sauce. Sprinkle with the mozzarella and Parmesan cheeses and top with the butter pieces. Bake until the cheese melts and the top is golden, about 15 minutes. Serve and enjoy!

Tips:

  • Choose the right mushrooms: Look for large, firm portobello mushrooms with intact gills. Avoid any that are bruised or slimy.
  • Clean the mushrooms thoroughly: Use a damp paper towel to wipe away any dirt or debris from the mushrooms. Do not rinse them under water, as this can make them soggy.
  • Remove the stems: Use a sharp knife to remove the stems from the mushrooms. You can discard the stems or save them for another use, such as in a soup or stir-fry.
  • Marinate the mushrooms: Marinating the mushrooms in a mixture of olive oil, balsamic vinegar, garlic, and herbs helps to enhance their flavor and make them more tender.
  • Cook the mushrooms properly: Portobello mushrooms can be cooked in a variety of ways, including grilling, roasting, sautéing, and baking. Be sure to cook them until they are tender but still have a slight bite to them.
  • Use a variety of toppings: There are endless possibilities when it comes to topping portobello mushrooms. Some popular options include cheese, vegetables, meat, and seafood.

Conclusion:

Portobello mushrooms are a versatile and delicious ingredient that can be used in a variety of dishes. Whether you are grilling them, roasting them, sautéing them, or baking them, portobello mushrooms are sure to please. With their meaty texture and rich flavor, they are a great choice for vegetarians and meat-eaters alike.
