3 lb squash (1 large or 2 small)
2 lb apples (4 large)
2 tbsp olive oil
1 tsp salt
½ tsp pepper
4 sprigs thyme
2 lb pork tenderloin (cut into 1-pound pieces)
2 tbsp olive oil
2 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
½ tsp cinnamon
½ cup apple cider
1 tbsp Dijon mustard
1 tbsp butter

Steps:

  • Preheat oven to 425°F.
  • Peel the squash, slice in half lengthwise and remove the seeds. Cut into 1/2-inch slices and place in a roasting pan. Drizzle with olive oil, salt, and pepper. 2 medium whole pork tenderloins (3/4 # each)
1 tsp olive oil
1/4 tsp ground black pepper
3 large granny smith apples, cored and thickly sliced
1 medium butternut squash (1 1/2 #'s) peeled, seeded and cut into cubes
2 Tbsp packed brown sugar
1/2 tsp ground cinnamon
1/2 c onion, chopped
1 3/4 c chicken stock
2 tsp all purpose flour

Steps:

  • 1. Heat oven to 425^. Spray a roasting pan with cooking spray.
  • 2. Brush the pork with the oil and season with the pepper. Place pork in the roaster. In a large bowl stir the apple, squash, brown sugar, cinnamon, onion and 1/2 cup of the stock. Add the apple mixture to the pan.
  • 3. Roast for 25 minutes or until the pork is cooked through, stirring the apple/squash mixture once during roasting. Remove the pork from the pan and keep it warm. Roast the apple mixture for 15 minutes or until it's browned. Remove the apple/squash mixture from the pan.
  • 4. Stir the remaining stock and flour in a small bowl until the mixture is smooth. Stir the stock mixture in the pan. Cook and stir over medium high heat until the mixture boils and thickens, scraping up the browned bits from the bottom of the pan. Serve the gravy mixture with the pork and apple/squash mixture. 1 large yellow squash, halved crosswise and thinly sliced lengthwise
3 tablespoons extra-virgin olive oil

  • Preheat the oven to 375 degrees F. Heat the olive oil in a large skillet over medium-high heat. Add the pork, 1/4 teaspoon salt and a few grinds of pepper. Cook, breaking up the pork, until slightly browned, 2 minutes. Add the garlic, mushrooms, half of the scallions and 2 tablespoons panko; cook 3 minutes. 2 pounds pork shoulder, cut into 1-inch cubes
1 large onion, chopped
3 cloves garlic, sliced
4 cups chicken broth, divided
4 cups beef broth, divided
¼ teaspoon dried rosemary
¼ teaspoon dried sage
2 bay leaves
¼ teaspoon dried thyme
1 large butternut squash, peeled and cubed
3 large potatoes, peeled and cubed
3 carrots, peeled and sliced
3 stalks celery, chopped
2 green apples - peeled, cored, and diced
salt and ground black pepper to taste

Steps:

  • Heat vegetable oil in a large stock pot over medium heat. Brown the pork cubes in the hot oil, about 10 minutes. Cook and stir onion and garlic with pork until onion is pork is no longer pink in middle, about 5 minutes.
  • Bring 2 cups chicken broth and 2 cups beef broth to a boil in a separate saucepan. 2 Tbsp. GREY POUPON Dijon Mustard
1 pork tenderloin (1 lb.), trimmed

Steps:

  • Heat oven to 425°F.
  • Cover rimmed baking sheet with foil; spray with cooking spray. Trim and discard ends of squash. Cut squash lengthwise in half; remove and discard seeds. Place squash halves, cut sides down, on cutting board; cut crosswise into 1/2-inch-thick slices. Place on prepared baking sheet. Add apples and onions.
