1/4 cup reduced-sodium soy sauce
3/4 cup low-sodium chicken broth
2 tablespoons fresh lime juice
4 teaspoons cornstarch
1 pound pork tenderloin, halved lengthwise and thinly sliced crosswise
Kosher salt and freshly ground pepper
2 tablespoons packed light-brown sugar
1/4 cup safflower oil
1 pound broccoli, florets cut into bite-size pieces, stems peeled and thinly sliced crosswise
1 small onion, halved and thinly sliced
8 cloves garlic, smashed and peeled
2 tablespoons minced fresh ginger (from a 2-inch piece)
1 to 2 teaspoons chili paste, such as sambal oelek, or 1/4 teaspoon red-pepper flakes
1 can (8 ounces) sliced water chestnuts, drained
Steamed rice, for serving (optional)

Steps:

  • Heat a large cast-iron skillet over high. Whisk together soy sauce, broth, lime juice, and cornstarch. Season pork with salt, pepper, and brown sugar.

Swirl remaining 2 tablespoons oil into skillet. Add broccoli, onion, and garlic; reduce heat to medium-high. Cook, stirring frequently, until vegetables are browned in places, about 5 minutes. Add ginger and chili paste; cook 30 seconds. Add soy mixture; simmer until sauce is reduced and thickens slightly and broccoli is crisp-tender, about 2 minutes.

Italian Pork Sandwich with Broccoli Rabe and Sharp Provolone image

Provided by Anne Burrell

Time 25m

Yield 4 servings

Number Of Ingredients 11

One 3/4-pound pork tenderloin
Kosher salt
Olive oil
Two 8-inch seeded semolina rolls, halved lengthwise
1/4 cup mayonnaise
1 1/2 tablespoons grated Parmesan
1 tablespoon Calabrian chiles in oil
1 teaspoon red wine vinegar
1 bunch broccoli rabe
3 cloves garlic, minced
6 slices sharp provolone cheese

Steps:

  • Preheat the oven to 400 degrees F and a grill pan over medium-high heat.
  • Sprinkle the pork tenderloin generously with salt. Coat the preheated grill pan with oil. Sear the tenderloin on all sides until golden brown and internal temperature reaches 145 F, about 10 minutes. Remove from heat and allow to rest for 5 to 7 minutes. Cut into 1/4-inch-thick slices.
  • Toast the rolls, cut side-down, on the grill pan allowing the bread to crisp up and soak up the flavor from the pork. Remove from heat and set aside.
  • Meanwhile, whisk together the mayonnaise, Parmesan, Calabrian chiles and vinegar in a small bowl.
  • Bring a large pot of salted water to a boil. Fill a large bowl with salted water and ice. Add the broccoli rabe to the boiling water and cook until just tender, about 1 minute. Remove from boiling water and drop immediately into the ice bath. Once cool, remove, drain and roughly chop.
  • Coat a large skillet with oil and heat. Add the garlic and cook, stirring, until just soft, about 1 minute. Add the broccoli rabe, season with salt and saute until heated through.
  • Build the sandwiches: Spread the mayonnaise-chile mixture on the toasted sides of a roll. Top the bottom of the roll with half the pork, broccoli rabe and provolone cheese. Top with top piece of the roll and transfer to a baking tray. Build the second sandwich with the remaining ingredients. Bake just until cheese melts, about 3 minutes.
  • Slice each sandwich in half and serve!

1 tablespoon rice vinegar
5 garlic cloves, chopped (divided)
1 tablespoon chopped fresh ginger
1/4 cup chicken broth

  • Heat chicken broth in skillet and add 3 cloves of chopped garlic.
  • Saute for a few minutes and then add pork strips.

  • Pour over pork and broccoli mixture.
  • Cook until heated.
  • Cook noodles as directed and drain.
  • Serve pork and broccoli on top of drained noodles.

Tips:

  • Choose the right cut of pork: Tenderloin, loin, or sirloin are good choices for this dish, as they are lean and cook quickly.
  • Marinate the pork: Marinating the pork in a mixture of soy sauce, rice wine, ginger, and garlic will help to tenderize it and add flavor.
  • Use a hot wok: A hot wok is essential for getting a good sear on the pork and broccoli.
  • Cook the pork in batches: If you are cooking a large amount of pork, cook it in batches to prevent the wok from becoming overcrowded.
  • Stir-fry the broccoli until it is tender-crisp: Broccoli should be cooked until it is slightly tender but still has a bit of a crunch.
  • Sauce the pork and broccoli: The sauce for this dish is made with soy sauce, rice wine, chicken broth, and cornstarch. Add the sauce to the pork and broccoli and stir-fry until the sauce has thickened.
  • Serve immediately: Pork with broccoli is best served immediately after it is cooked.
