Tips:
- Choose a tenderloin that is about 1 pound in weight. This will ensure that it cooks evenly.
- Use a meat mallet to pound the tenderloin to an even thickness. This will help it cook more evenly and prevent it from drying out.
- Coat the tenderloin in flour, eggs, and breadcrumbs. This will help to create a crispy crust.
- Pan-fry the tenderloin in olive oil until golden brown. This will cook the tenderloin through and give it a nice flavor.
- Transfer the tenderloin to a baking dish and top with marinara sauce, mozzarella cheese, and Parmesan cheese.
- Bake the tenderloin in the oven until the cheese is melted and bubbly.
- Let the tenderloin rest for a few minutes before slicing and serving. This will help the juices redistribute throughout the meat.
- Serve the tenderloin with your favorite sides, such as pasta, rice, or salad.
