HERB-MARINATED PORK TENDERLOINS

Provided by Ina Garten

Categories     main-dish

Time 3h35m

Yield 6 servings

Number Of Ingredients 10

1 lemon, zest grated
3/4 cup freshly squeezed lemon juice (4 to 6 lemons)
Good olive oil
2 tablespoons minced garlic (6 cloves)
1 1/2 tablespoons minced fresh rosemary leaves
1 tablespoon chopped fresh thyme leaves
2 teaspoons Dijon mustard
Kosher salt
3 pork tenderloins (about 1 pound each)
Freshly ground black pepper

Steps:

  • Combine the lemon zest, lemon juice, 1/2 cup olive oil, garlic, rosemary, thyme, mustard, and 2 teaspoons salt in a sturdy 1-gallon resealable plastic bag. Add the pork tenderloins and turn to coat with the marinade. Squeeze out the air and seal the bag. Marinate the pork in the refrigerator for at least 3 hours but preferably overnight.
  • Preheat the oven to 400 degrees F.
  • Remove the tenderloins from the marinade and discard the marinade but leave the herbs that cling to the meat. Sprinkle the tenderloins generously with salt and pepper. Heat 3 tablespoons olive oil in a large oven-proof saute pan over medium-high heat. Sear the pork tenderloins on all sides until golden brown. Place the saute pan in the oven and roast the tenderloins for 10 to 15 minutes or until the meat registers 137 degrees F at the thickest part. Transfer the tenderloins to a platter and cover tightly with aluminum foil. Allow to rest for 10 minutes. Carve in 1/2-inch-thick diagonal slices. The thickest part of the tenderloin will be quite pink (it's just fine!) and the thinnest part will be well done. Season with salt and pepper and serve warm, or at room temperature with the juices that collect in the platter.

PORK TENDERLOIN WITH SEASONED RUB

Pork Tenderloin with Seasoned Rub image

For an elegant main course, try Ellie Krieger's Pork Tenderloin with Seasoned Rub recipe, a succulent roast spiced with cumin and coriander from Food Network.

Provided by Ellie Krieger

Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 9

1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon dried thyme
Salt
1 1/4 pounds pork tenderloin
1 tablespoon olive oil
1 teaspoon minced garlic

Steps:

  • Preheat the oven to 450 degrees F.
  • In separate bowl mix dry ingredients such as garlic powder, oregano, cumin, coriander, thyme and salt. Stir mixture with a fork until all the ingredients are well combined and they form a seasoning. This will be used as a rub to ensure the pork is well seasoned throughout. Sprinkle the rub over the tenderloin with a dry hand, then rub the pork with the seasoning over both sides of the meat, pressing gently so the seasoning adheres well to the tenderloin.
  • In a large skillet over medium-high heat, add the olive oil and heat. Add the minced garlic and saute, stirring, for 1 minute. Put tenderloin in the pan and cook for about 10 minutes, searing each side using tongs to turn the meat. Transfer meat to a roasting pan and bake for 20 minutes. Slice and serve.

MARINATED THEN BAKED PORK TENDERLOIN RECIPE - (4.3/5)

Marinated then Baked Pork Tenderloin Recipe - (4.3/5) image

Provided by mytastytreasures

Number Of Ingredients 9

1/4 cup soy sauce
2 tablespoons honey
1 tablespoon brown sugar
1/2 teaspoon cinnamon
2 cloves crushed garlic
2 tablespoons red wine (I used Merlot)
1 teaspoon ginger
2 scallions, chopped thin
2 (1 pound) pork tenderloins

Steps:

  • Mix the first 8 ingredients together in a bowl. Pour over tenderlons in a ziploc bag. Marinate 6-24 hours, I chose 24. Place pork tenderloins in baking dish, pour marinade over them. Bake at 350 for about 45 minutes uncovered. Until internal temp registers 145. Can double marinade. Serve with marinade to dip. Note: Make sure that any marinade you use as a dip has been cooked with the meat.

Tips:

  • Choose the right cut of pork tenderloin: Look for a tenderloin that is about 1 pound in weight and has a uniform thickness. This will ensure that it cooks evenly.
  • Use a flavorful marinade: The marinade is what will give your pork tenderloin its flavor, so be sure to choose one that you like. Experiment with different herbs, spices, and citrus fruits to find a combination that you enjoy.
  • Marinate the pork tenderloin for at least 30 minutes: This will give the marinade time to penetrate the meat and infuse it with flavor.
  • Cook the pork tenderloin over medium heat: This will help to prevent the meat from drying out.
  • Use a meat thermometer to ensure that the pork tenderloin is cooked to the desired doneness: The internal temperature of the pork tenderloin should be 145 degrees Fahrenheit for medium-rare, 155 degrees Fahrenheit for medium, and 165 degrees Fahrenheit for well-done.
  • Let the pork tenderloin rest for 10 minutes before slicing: This will help the juices to redistribute throughout the meat, resulting in a more tender and flavorful dish.

Conclusion:

Pork tenderloin is a delicious and versatile cut of meat that can be cooked in a variety of ways. By following these tips, you can create a succulent and flavorful pork tenderloin that is sure to impress your family and friends. So next time you're looking for a quick and easy weeknight meal, give pork tenderloin a try!
