GRANDMA'S BREADED PORK STEAK

Grandma's Breaded Pork Steak image

This recipe is a family favorite that was handed down by my grandmother. Pork steak is preferred to pork chops. They always come out crisp on the outside and melt in your mouth tender on the inside!

Provided by Kathy Joppie

Categories     Steaks and Chops

Time 1h5m

Number Of Ingredients 4

4 medium pork steaks
3 medium eggs
2 c saltine crackers, crushed
canola oil

Steps:

  • 1. Whisk eggs and pour into pie plate or like container.
  • 2. Crush crackers. (I do this by putting crackers into a ziplock bag and then use a rolling pin) Do not use food processor unless you do not like the texture of the cracker pieces. Then pour crackers into a separate container.
  • 3. Season the pork steaks with salt and pepper. Dip in the egg and then dredge in the crackers, making sure they are coated well on each side.
  • 4. Pre heat oven to 350 degrees. Add oil to a heated skillet and brown steaks on each side 2-3 minutes to crisp and brown the crackers. Put onto a baking sheet (Do not cover) Bake in oven 30-45 minutes (Depending on the thickness of the steaks.)

THAI MARINADE [STEAK, PORK, CHICKEN OR FISH]

THAI MARINADE [STEAK, PORK, CHICKEN OR FISH] image

Categories     Marinade     Beef     Chicken     Citrus     Fish     Herb     Pork     Shellfish

Number Of Ingredients 7

1 Bunch Cilantro [bottom stems twisted off]
1 Bunch Scallions [green onion]
3 Tablespoons Thai Fish Sauce [nam pla or nouc nam]
Juice of 2-3 Limes [should be about 3 tablespoons]
3 Tablespoons Sugar [slightly heaping]
1-3 Serrano or Jalapeño Chilies [depending on size]
4-5 Large Cloves Garlic

Steps:

  • Blend everything in food processor. Use to marinate meat [8 hours or overnight], chicken [4-6 hours], or fish [1-2 hours]. I simply combine the sauce and the meat in a large ziplock bag and put it in the refrigerator for the alloted time. Then it's good to go on the grill. Heat the marinade and serve it on the side. The sauce will taste a little different every time, just because the chilies can be so unpredictable.

PORK STEAK WITH ONION GRAVY

Pork Steak with Onion Gravy image

Just add some mashed potatoes and green beans and you have a delicious meal.

Provided by barbara lentz

Categories     Pork

Time 55m

Number Of Ingredients 8

2 pork steaks
2 Tbsp canola oil
1 large onion sliced into rings
6 clove garlic minced
salt and pepper to taste
4 c beef broth divided
1/3 c sour cream
1 Tbsp flour

Steps:

  • 1. Season the steaks with salt and pepper. Add oil to large skillet. Sear the steaks on both sides. Pour two cups of beef broth over the steaks. Let cook 15 minutes turning the steaks once. Pour another cup of beef broth over the steaks and add the onions and garlic. Let cook another 15 minutes turning steaks once.
  • 2. Pour the remaining beef broth over the steaks. Cook until steaks are nice and tender and falling off the bone probably another 15 to 20 minutes. Watch the stock and make sure it doesn't dry up adding some water if needed. Mix the flour into the sour cream.
  • 3. When the steaks are done remove them from the pan and whisk the sour cream mixture into the stock. Stir until well incorporated. Taste and adjust for seasoning. Server over the steaks

Tips:

  • Choose the right pork steak: Look for steaks that are at least 1 inch thick and have a good amount of marbling. This will ensure that the steak is tender and flavorful.
  • Tenderize the steak: Pounding the steak with a meat mallet or using a fork to poke holes in it will help to tenderize it and make it more receptive to marinade.
  • Use a flavorful marinade: Marinating the steak for at least 30 minutes (or up to overnight) in a mixture of herbs, spices, and liquids will add flavor and moisture to the meat.
  • Cook the steak over medium-high heat: This will help to create a nice crust on the outside of the steak while keeping the inside tender and juicy.
  • Don't overcook the steak: Pork steak is best cooked to an internal temperature of 145 degrees Fahrenheit. Cooking it beyond this point will make it tough and dry.
  • Let the steak rest before serving: Allow the steak to rest for a few minutes before slicing it and serving. This will help the juices to redistribute throughout the meat, resulting in a more tender and flavorful steak.

Conclusion:

Pork steak is a versatile and delicious cut of meat that can be cooked in a variety of ways. By following these tips, you can ensure that your pork steak turns out tender, juicy, and flavorful every time. So next time you're looking for a quick and easy weeknight meal, give pork steak a try!
