SKILLET PORK AND PEPPERS
This one-pan dish has flavors reminiscent of the Italian-American classic sausage-and-peppers, but is much lighter. We've swapped the typical sausage for lean and juicy pork tenderloin and added pickled pepperoncini for zip.

Steps:
- Preheat the broiler. Slice the pork on an angle into 1-inch-thick pieces; season with salt. Heat a large ovenproof skillet over medium-high heat; add 1 tablespoon olive oil. Add the onion and bell peppers; season with 1/2 teaspoon salt and cook until the vegetables are crisp-tender and slightly browned, 4 to 6 minutes. Transfer to a plate.
- Add the remaining 2 tablespoons oil to the skillet. Add the pork and sear over high heat until browned, 2 to 4 minutes per side. Transfer the pork to the plate with the onion and peppers.
- Reduce the heat to medium and add the garlic, sage and tomato paste to the skillet. Cook, stirring, until the tomato paste turns brick-red, about 1 minute. Add the pepperoncini slices and their liquid, then pour in the wine and bring to a boil, scraping up any browned bits with a wooden spoon or spatula. Add the broth and return to a simmer. Arrange the pork in a single layer in the skillet; add the onion and peppers and sprinkle with cheese. Transfer to the oven and broil until the pork is cooked through, 4 to 7 minutes.

Steps:
- Preheat smoker using a mix of hickory and a few oak wood chips. The fire should burn down to the coals, not ash, when cooking the pork shoulder.
- Season the pork shoulder with a little salt and place the meat on the grill. Cover the smoker and let the pork smoke for 8 to 10 hours.
- Combine the rest of the ingredients in a saucepan and bring to a boil. Reduce to a simmer, stirring the sauce frequently. If you like your sauces a little spicier, add more black pepper. After about 20 minutes, remove the saucepan from the heat and set aside.
- Once the pork is finished cooking, remove from the smoker and let rest for 5 to 10 minutes. Then, hand pull, chop, or slice the pork. Serve the meat with some of the Lexington dipping sauce poured over the top.

Steps:
- In a small pan, toast the fennel and black pepper.
- Add the fennel, black pepper, paprika, and salt to a spice grinder and grind.
- Put the pork in a large, (2-gallon, if possible), resealable plastic bag. Add the garlic, vinegar, olive oil and the spices. Seal the bag, and massage the marinade all over the pork. Put the bag into a glass or metal pan (in case bag leaks) and refrigerate for 4 hours. Remove from refrigerator and let come to room temperature.
- Add 2 tablespoons cilantro, lime juice and 1 cup of crema to a small bowl. Combine well, pour into squeeze bottle and refrigerate.
- Preheat the oven to 375 degrees F.
- Heat corn tortillas in oven, wrapped in foil in packs of 8, in the oven while you are grilling the pork.
- Heat an indoor or outdoor grill to medium heat. Add the pork steaks and grill until medium, turning, for approximately 10 minutes total. Remove to a cutting board and let rest 5 minutes, then slice into long thin strips.
- Serve in warmed tortillas, topped with tapenade, squeezed with lime wedges, drizzled with crema and topped with remaining chopped fresh cilantro.
Tips:
- For a flavorful marinade, combine olive oil, garlic, cumin, paprika, chili powder, salt, and pepper. Let the pork shoulder steaks soak in this mixture for at least 30 minutes.
- Use a cast iron skillet or grill pan to get a nice sear on the pork steaks. This will help to lock in the juices and create a crispy crust.
- Cook the pork steaks until they reach an internal temperature of 145 degrees Fahrenheit. This will ensure that they are cooked through but still remain juicy and tender.
- While the pork steaks are cooking, prepare the hot pepper dip. Simply combine cream cheese, sour cream, hot peppers, green onions, and cilantro in a food processor or blender until smooth.
- Serve the pork shoulder steaks with the hot pepper dip and your favorite sides, such as rice, beans, or tortillas.
Conclusion:
Pork shoulder steaks are a delicious and affordable cut of meat that can be cooked in a variety of ways. This recipe for pork shoulder steaks with hot pepper dip is a great way to enjoy this versatile cut of meat. The marinade and hot pepper dip add tons of flavor to the pork, making it a perfect dish for any occasion.
