8 garlic cloves, peeled, crushed
1 2" piece ginger, peeled, sliced
1/2 cup dry sake
1/2 cup gochujang (Korean hot pepper paste)
1/2 cup mirin (sweet Japanese rice wine)
1/4 cup vegetable oil, plus more for grilling
1 1/2 pounds skinless, boneless pork shoulder (Boston butt), sliced 3/4" thick

Steps:

  • Purée garlic, ginger, sake, gochujang, mirin, and 1/4 cup oil in a blender. Set 1/4 cup marinade aside; chill. Transfer remaining marinade to a large dish. Add pork; turn to coat. Chill, turning occasionally, at least 2 hours.
  • Prepare grill for medium-high heat; oil grate. Remove pork from marinade and grill, basting with reserved marinade, turning occasionally, and moving pork to a cooler area if flare-up occurs, until cooked to desired doneness, 8-10 minutes for medium-rare.
  • Transfer pork to a cutting board and let rest 5 minutes before thinly slicing against the grain.

2 tablespoons green olives or 2 tablespoons vegetable oil
1 1/2 lbs pork blade steaks, Pork Steaks should be cut 1/2 inch thick. There should be 4 to 5 of
1 pepper (3 Total;There should be 1 Med Pepper of Red, Green and Yellow Sweet Peppers)
1 clove garlic, finely chopped
1 medium tomatoes, Coarsely Chopped
1 envelope onion soup mix
1 cup water
1/2 teaspoon thyme leaves
1/8 teaspoon pepper

Steps:

  • In large skillet, heat oil and brown steaks over medium-high heat.
  • Remove steaks.
  • Reduce heat to medium, into skillet, add peppers and garlic and cook 5 minutes or until peppers are crisp tender.
  • Stir in tomato, then onion soup mix blended with water, thyme and pepper.
  • Bring to a boil.
  • Return steaks to skillet and simmer, uncovered, stirring sauce occasionally 25 minutes or until steaks and vegetables are tender.

Steps:

  • Preheat the broiler. Slice the pork on an angle into 1-inch-thick pieces; season with salt. Heat a large ovenproof skillet over medium-high heat; add 1 tablespoon olive oil. Add the onion and bell peppers; season with 1/2 teaspoon salt and cook until the vegetables are crisp-tender and slightly browned, 4 to 6 minutes. Transfer to a plate.
  • Add the remaining 2 tablespoons oil to the skillet. Add the pork and sear over high heat until browned, 2 to 4 minutes per side. Transfer the pork to the plate with the onion and peppers.
  • Reduce the heat to medium and add the garlic, sage and tomato paste to the skillet. Cook, stirring, until the tomato paste turns brick-red, about 1 minute. 1 1/2 cups cider vinegar
10 tablespoons ketchup
1/2 teaspoon cayenne pepper

2 tablespoons ground toasted fennel seeds
2 tablespoons freshly cracked black pepper
1 tablespoon smoked paprika (pimenton)
1 tablespoon salt
6 bone-in pork shoulder steaks, about 3 pounds
1/2 cup peeled, crushed garlic
1/2 cup red wine vinegar
3 tablespoons olive oil
1/2 cup freshly chopped cilantro leaves, divided
1 lime, juiced, plus 6 limes, sliced into wedges, for serving
1 cup crema Mexciano or sour cream
24 corn tortillas
Olive tapenade, purchased

Steps:

  • In a small pan, toast the fennel and black pepper.
  • Add the fennel, black pepper, paprika, and salt to a spice grinder and grind.
