GRANDMA'S SAUSAGE TURKEY STUFFING

Grandma's Sausage Turkey Stuffing image

This recipe is from my husband's mother and is a family tradition and loved by all. It is surprisingly easy. There is never enough so I usually double this recipe. Our son is very allergic to dairy products so I was thrilled to discover that this was safe for him as long as I double checked the ingredients in the sausage and Cubed Stuffing each time as things change. Needless to say, it is his favorite part of Thanksgiving.

Time 25m

Yield 8-10 serving(s)

Number Of Ingredients 8

1 lb Bob Evans sausage, Mild sausage
3/4 cup onion, finely chopped (one large)
8 celery ribs, finely sliced
1 (16 ounce) can chicken stock
1 (14 ounce) bag cubed peppridge farm herb stuffing mix
1/4 cup fresh parsley, washed and chopped
1 teaspoon poultry seasoning
1 teaspoon dried sage

Steps:

  • To make this easy to prepare, I chop the onion, celery and parsley first.
  • In a large skillet, (I use an electric skillet for easy clean up) chop up the pork sausage with a utensil as it starts to cook. Just as this is starting to cook a bit, add your onion, celery, poultry seasoning and sage. Cook until the sausage is done and the celery and onion have cooked down. Taste it as it is safe to eat at this point. Add more seasoning if you think it needs it. It should taste like stuffing at this point and very good! Turn off heat.
  • In a large bowl pour 1/2 bag of the cubed stuffing croutons, 1/2 of the chicken stock and 1/2 of the sausage. Stir well and repeat.
  • Refrigerate overnight or until you are ready to use. Makes enough to stuff a 16-20 pound turkey and a small casserole on the side. Spray your casserole dish with vegetable spray and add some turkey drippings to the casserole while cooking. Casserole cooks in about 25 minutes on 325 degree oven.
  • Enjoy!

APPLE-SAUSAGE STUFFING FOR TURKEY

Apple-Sausage Stuffing for Turkey image

I found this recipe in an old Homemaker's magazine. I made it for a Thanksgiving dinner a few years ago, and now whenever it's my turn to cook a holiday meal, I have to make this! It's easy and delicious. I prefer making the stuffing as a side dish, rather than stuffing the turkey, so the turkey cooks quicker and it makes less of a mess.

MOIST AND TASTY PORK STUFFING

Moist and Tasty Pork Stuffing image

This is the stuffing that has been passed down in our family. No turkey is complete without this tasty addition. I've seen these ingredients in other stuffing recipes, but they call for cooking the sausage in a fry pan. My sister and I agree that this method makes a more moist stuffing.

Provided by 4inLeo

Categories     Pork

Time 1h10m

Yield 8-10 serving(s)

Number Of Ingredients 6

2 lbs lean ground pork (I like to use 1 lb pork and 1 lb mild sausage) or 2 lbs bulk sausage (I like to use 1 lb pork and 1 lb mild sausage)
2 (14 ounce) packages Pepperidge Farm Herb Stuffing (not cubed not cornbread. I use about one and a half packages.)
1 -2 large onion, chopped
6 celery & leaves, chopped
1 -2 cup water (need enough to cover pork as it cooks)
1 teaspoon Bell's seasoning (may omit)

Steps:

  • Place meat, onion, celery and seasoning in a pot. Cover with water. Bring to a boil and simmer for one hour stirring occasionally to break up meat chunks.
  • Remove from heat. If there is an excess amount of liquid pour in a cup and reserve. Stir in the stuffing mixture. This mixture should be a little dryer than you like it since it will absorb some of the turkey juices. If too dry, add some of the reserved liquid.
  • The stuffing can be prepared the night before and refrigerated overnight. This makes enough to stuff a 20 lb bird. Remember not to stuff your turkey until it is ready to cook. You can cook the stuffing that didn't fit in your bird in a crock pot (or in the oven if you have room).

Tips:

  • Use fresh ingredients: Fresh herbs, vegetables, and meat will give your stuffing the best flavor. If you can, use organic ingredients whenever possible.
  • Don't overstuff the turkey: A good rule of thumb is to fill the turkey to about 2/3 full. This will allow the stuffing to cook evenly and prevent the turkey from becoming too dry.
  • Bake the stuffing separately: If you're worried about the stuffing cooking evenly inside the turkey, you can bake it separately in a casserole dish. Just be sure to cook it to an internal temperature of 165 degrees Fahrenheit.
  • Add moisture: If your stuffing seems dry, add some chicken broth or water to moisten it up.
  • Season the stuffing well: Don't be afraid to add plenty of seasonings to your stuffing. This will help to enhance the flavor of the meat and vegetables.

Conclusion:

Pork sausage and turkey stuffing is a classic Thanksgiving dish that is sure to please everyone at your table. With its savory flavors and moist texture, this stuffing is a perfect complement to roasted turkey. Whether you make it inside the turkey or bake it separately, this stuffing is sure to be a hit.
