Time 3h30m

Number Of Ingredients 9

2 tablespoons extra-virgin olive oil, plus more for pan
8 garlic cloves, peeled
3 tablespoons fresh rosemary leaves
2 tablespoons fennel seed
Coarse salt and ground pepper
1 boneless pork shoulder (4 pounds), thin layer of fat left on
1/2 cup dry white wine, such as Sauvignon Blanc
1 tablespoon all-purpose flour
1 1/2 cups low-sodium chicken broth

Steps:

  • Preheat oven to 450 degrees. Lightly oil a heavy-bottomed metal roasting pan. In a food processor, combine oil, garlic, rosemary, fennel seed, 2 teaspoons salt, and 1 teaspoon pepper. Pulse until a paste forms.
  • With a paring knife, gently score the pork's fat layer, making 10 to 15 small 1/2-inch-deep cuts all over. Rub pork with garlic paste, pushing it into cuts. With kitchen twine, tie pork in 1-inch increments and transfer to pan.
  • Roast until golden brown, 30 minutes. Reduce heat to 300 degrees and roast until an instant-read thermometer inserted into center reads 170 degrees, about 2 1/2 hours. Transfer pork to a cutting board, cover with foil, and let rest 15 minutes before slicing.
  • Meanwhile, pour pan drippings into a small bowl and skim fat. Set pan over medium, add wine, and cook, stirring and scraping up browned bits, until wine is reduced by half, 4 minutes. Add flour and whisk to combine. Cook 1 minute. Slowly whisk in drippings and broth. Cook, whisking, until sauce thickens slightly, 3 minutes. Serve with pork.

In summer, we like to have our homegrown sweet corn and cheesy potatoes hot off the grill, a cold salad and green vegetables alongside it. ROASTED PORK LOIN WITH SWEET TANGY SAUCE

Roasted Pork Loin With Sweet Tangy Sauce image

This roast is so tender and juicy and has a sweet tangy sauce that will melt in your mouth.I got this from another website and tweaked it to my likings. I roast this is a glass baking dish on top of an onion cut into 4 pieces. If you are preparing a larger roast just double the ingredients. The sauce is also good on rice if you'd like. Prep time does not include marinating time. I plate this with the onions that were in the bottom-oh so good!

Tips:

  • Choose the right cut of pork: Pork shoulder (also known as pork butt) is a flavorful and affordable cut that is perfect for slow cooking. It becomes tender and juicy when cooked low and slow.
  • Sear the pork before roasting: Searing the pork helps to develop a nice crust and lock in the juices. To sear the pork, heat a large skillet over medium-high heat. Add the pork roast and sear on all sides until browned.
  • Use a tangy sauce: The tangy sauce in this recipe helps to balance out the richness of the pork. The sauce is made with a combination of orange juice, apple cider vinegar, brown sugar, and spices.
  • Cook the pork low and slow: The best way to cook pork shoulder is to cook it low and slow. This allows the pork to become tender and juicy. Cook the pork in a preheated oven at 300 degrees Fahrenheit for 3-4 hours, or until the internal temperature reaches 145 degrees Fahrenheit.
  • Let the pork rest before serving: Once the pork is cooked, let it rest for 10-15 minutes before serving. This allows the juices to redistribute throughout the meat, making it more tender and flavorful.

Conclusion:

This pork roast with tangy sauce is a delicious and easy-to-make dish that is perfect for a special occasion or a weeknight meal. The pork is tender and juicy, and the sauce is tangy and flavorful. Serve the pork with your favorite sides, such as mashed potatoes, roasted vegetables, or a salad.
