PORK ROAST AND SAUERKRAUT

Pork Roast and Sauerkraut image

My family which is mostly German-Irish ate the same meal for New Year's every year of my life. It consisted of pork roast, sauerkraut, kielbasa and mashed potatoes. We ate the pork (pork roast and kielbasa) because pigs are a symbol of progress. Pigs push forward, rooting themselves in the ground before moving, and we need to move into the New Year in the same way. We eat sauerkraut, as it's believed it will bring blessings and wealth for the new year. It also reminds us that with the good comes the bitter as well. We eat potatoes to remind us that even as poor men we still had potatoes to eat.

PORK ROAST W/ SAUERKRAUT EXCELLANTE

Pork Roast W/ Sauerkraut Excellante image

This recipe was given to me from my bro-in-law. It makes the pork roast juicy and the sauerkraut is so tasty sweetened this way by the juices from the pork roast. Buy fresh sauerkraut or the kind that is packaged in plastic bags, it's much crisper than the canned type. I always get asked for the recipe.

Tips:

  • Choose the right cut of pork: Pork shoulder, also known as pork butt, is the best cut for this recipe. It is a fatty and flavorful cut that will become tender and juicy after slow-cooking.
  • Brown the pork before roasting: Browning the pork before roasting helps to develop flavor and color. You can brown the pork in a skillet over medium-high heat for a few minutes per side, or you can use the "sear" function on your oven.
  • Use a flavorful liquid: The liquid that you use to braise the pork roast will add a lot of flavor to the dish. You can use chicken broth, beef broth, apple cider, or even beer. If you want the sauerkraut remain sour, use a more neutral liquid like water or chicken broth. If you want the sauerkraut to be less sour, use a more acidic liquid like apple cider or beer.
  • Add vegetables: Vegetables like carrots, celery, and onions add flavor and texture to the dish. You can also add other vegetables like potatoes, turnips, or parsnips.
  • Cook the pork roast until it is fall-apart tender: The pork roast should be cooked until it is fall-apart tender. This will take about 2-3 hours in a 325°F oven. You can check the tenderness of the pork by inserting a fork into the thickest part of the roast. If the fork goes in easily, the pork is done.

Conclusion:

Pork roast and sauerkraut is a classic comfort food dish that is perfect for a cold winter day. It is easy to make and can be tailored to your own taste by adding different vegetables or seasonings. So next time you are looking for a hearty and flavorful meal, give pork roast and sauerkraut a try!
