PORK HAMONADO RECIPE - (4/5)

Number Of Ingredients 8

A slab of pork with fat
Crushed garlic
1/2 cup of soy sauce
1 cup of fruit cocktail syrup
Peppercorns
A dash of salt (optional)
1 tbsp sugar (optional)
Spring onion, cut into small ringlets for garnishing (optional)

Steps:

  • Drop pork slab into a large saucepan with just enough boiling water to cover and simmer. Skim the surface until the broth is clear. Simmer for an hour then pour in soy sauce, fruit syrup and all the other ingredients. Simmer with lid closed over low fire, turning the meat from time to time, for hours or until the rind quite literally melts in your mouth. Leave little sauce to moist the meat. Slice and serve with rice and blanched vegetables. Note: If you don't have fruit cocktail syrup, replace it with fruit juice (orange, pineapple, apple or tropical will do) or just vinegar and probably more sugar.

Tips:

  • Choose the right pork cut. The best cuts for hamonado are pork shoulder or pork loin. These cuts are flavorful and tender, and they hold up well to the braising process.
  • Brown the pork before braising. Browning the pork adds flavor and color to the dish. To brown the pork, heat some oil in a large skillet over medium-high heat. Add the pork and cook until it is browned on all sides.
  • Use a flavorful braising liquid. The braising liquid is what gives hamonado its signature flavor. A good braising liquid will include a combination of savory ingredients, such as soy sauce, vinegar, garlic, and onions.
  • Braise the pork until it is fall-apart tender. The pork should be cooked until it is very tender, so that it can be easily shredded with a fork. This will typically take about 2-3 hours.
  • Serve hamonado with rice. Hamonado is typically served with rice, which helps to soak up the flavorful braising liquid. You can also serve hamonado with other side dishes, such as vegetables or mashed potatoes.

Conclusion:

Pork hamonado is a delicious and easy-to-make dish that is perfect for any occasion. With its flavorful braising liquid and tender pork, hamonado is sure to be a hit with your family and friends. So next time you're looking for a new recipe to try, give pork hamonado a try. You won't be disappointed!
