Fresh ham roasts are moist, tender, flavorful, and incredibly delicious. "How do I cook a ham roast?" Good question! I've got a simple ham roast recipe and easy tips for cooking any fresh ham roast!

A 3 - 5 lb fresh uncooked ham roast (not cured)
2 1/2 cups of water
Salt
Fresh Ground Black Pepper
1/2 cup real maple syrup
1/4 cup balsamic vinegar

Steps:

  • Brine roast for 3-6 hours then pat dry. (Instructions below!)
  • Prep your ham! Cut the top fat layer in a diamond pattern or in parallel lines for seasoning!
  • Preheat oven to 350º
  • Place ham into a 13×9 inch baking dish.
  • Season generously with salt and pepper on all sides of your ham roast. Make sure to rub the seasoning into the diamond-shaped or parallel lines cup on the fat layer.
  • Add 2 - 3 cups of cold water to the baking pan... The water level needs to come up about 1 inch on the sides of your roast.
  • Tightly cover your shallow roasting pan or baking dish with foil to seal in steam.
  • Place prepared roast into the oven for 2 hours, or until the internal temperature reaches 145º. For food safety make sure your ham reaches at least 145 degrees internally! For a bigger ham roast, you should use less salt and a longer soak time. The reason for this is to let the solution penetrate the ham evenly all the way to the bone without making the outside too salty. Smaller hams require more salt and a shorter soak time. After 2 hours of roasting, remove roast from the oven.
  • Turn the oven temperature up to 450º
  • Remove foil from pan.
  • Mix maple syrup and balsamic vinegar and bast roast with that.
  • Place ham roast in the oven, and set the timer for 10-15 minutes of cook time. Baste roast every 5 minutes or as often as you like at this stage of cooking!
  • After 10-15 minutes, turn the ham roast over and baste the other side, roast for another 10-15 minutes to brown both sides. (The water will ALMOST be cooked out, but there should be a little left for basting before serving.)
  • After browning, remove your roast from the oven, and let it cool for at least 10 mins.
  • For best results, use a spoon and take the remaining liquids from the bottom of your baking dish and cover your baked ham roast with them. This gives the roast back all those yummy flavors that have cooked down through the roasting process!

1 cup ginger ale
1 cup orange juice or 1 cup pineapple juice
1/2 cup brown sugar
3 tablespoons vegetable oil
1 tablespoon cider vinegar
2 teaspoons dry mustard
3/4 teaspoon ground ginger
1/4 teaspoon ground cloves

Steps:

  • Mix all marinade ingredients.

½ cup Worcestershire sauce
2 tablespoons honey
2 tablespoons cider vinegar
½ teaspoon mustard seed
½ teaspoon mustard powder
1 teaspoon lemon pepper
½ teaspoon celery salt
1 clove garlic, minced

Steps:

  • Prepare grill for indirect heat.
  • In a large resealable plastic bag, combine the Worcestershire sauce, honey, vinegar, mustard seed, mustard powder, lemon pepper, celery salt, and garlic; seal, and mix ingredients. Place the roast in the plastic bag, press air out of bag, and seal. Marinate for 2 hours in the refrigerator, turning the roast occasionally to help coat while marinating.

1 boneless whole pork loin roast (2-1/2 pounds)
1/4 cup white wine or chicken broth
1/4 cup honey
1 tablespoon brown sugar

Steps:

  • In a large resealable plastic bag, combine the first six ingredients; add pork roast. Seal bag and turn to coat; refrigerate for 8 hours or overnight, turning several times. , Preheat oven to 350°. Drain and discard marinade. Place roast on a rack in a shallow foil-lined roasting pan. This recipe comes from my Auntie Eleanor and is about 40 years old. This is an amazing recipe. I cannot tell you how good this is you have to make it yourself a unique taste!

12 ounces 7-Up soda, soda
1 tablespoon mustard
1/4 cup dark brown sugar
4 ounces crushed pineapple
8 garlic cloves (to taste)
2 onions

Steps:

  • 4 cloves of garlic aside.
  • 4 garlic cloves finely minced add to sauce pan.
  • Add all ingredients including juice from crushed pineapple to a sauce pan.
  • Simmer until thicken.
  • Pierce pork or ham roast.
  • Insert garlic cloves.
  • quarter onions and add to roasting pan with roast.
  • Baste roast and put into 350 oven.
  • Baste every 1/2 hour until browned and roast is done.
  • Pineapple rings can be added on top with toothpicks before roast is done Maraschino cherries can be put in center of rings.
  • Note:.
  • Please only use 7 UP and French's mustard it is just not the same without them. Make without the 4 oz of pineapple as well still wonderful it will make a fabulous gravy.
  • This recipe which came to me from my Aunt Eleanor, did not include the garlic so you may want to leave it out.

Bourbon-Marinated Pork Roast with Country Ham Jus image

1/4 cup maple syrup
1/4 cup sorghum molasses (recommended: Kentucky)
2 tablespoons bourbon
2 tablespoons sweet chili sauce (such as Heinz)
1 1/2 teaspoons Asian garlic chili paste
One 8-bone crown roast of pork, 5 to 7 pounds, with 1/4-inch fat and bones "Frenched"*
Country Ham Jus, recipe follows
Pawpaw Relish, recipe follows
8 ounces country ham bones or smoked pork bones (recommended: Kentucky brand)
4 cups water
1 small onion, chopped
1 rib celery, chopped
1 small carrot, chopped
1/2 teaspoon dried thyme
1 bay leaf
1 tablespoon whole peppercorns
2 cups demi-glace or very rich veal stock
1 green tomato, diced
1 mango, diced
1/2 red bell pepper, diced
1/2 red onion, diced
1 lime, juiced
2 tablespoons honey
1/4 bunch cilantro leaves, chopped
1/2 teaspoon ground cumin
Salt and pepper
1/4 cup pawpaw puree**

Steps:

  • To marinate the pork roast, combine maple syrup, molasses, bourbon, chili sauce, and chili paste in a shallow dish and mix well. Brush the roast all over with the marinade and refrigerate it 8 hours or longer.
  • Preheat 1 side of a grill to high heat.
  • To cook, sear the roast all over on a hot grill. Once it browns, move the meat to a cooler spot. Lower the heat and continue to cook, covered, at a lower temperature, until it is done, about 11/2 to 2 hours, depending on its size -- the meat should register 150 to 155 degrees F in its thickest part.
  • To serve, reheat the Country Ham Jus and divide it among serving plates. Place pork on plates and add a generous spoonful of Pawpaw Relish.
  • For the country ham jus, combine the ham bones, 4 cups water, onion, celery, carrot, thyme, bay leaf, and pepper in a large stockpot. Simmer, uncovered, for 3 hours, or until liquid is reduced to 1 cup. Strain out the solids. Combine with demi-glace in pot and cook until reduced to 1 1/2 cups. Add salt, to taste. Refrigerate.
  • Mix all the ingredients together.
